Johnny Cask has entered the building! We’ve retrofitted a 15 barrel tank to perfectly produce a very special cask conditioned ale (so, we have a little time to play around during winters at the Delaware coast). This beer, known as Dogfish Head 75 Minute IPA is a blend of 60 and 90 Minute IPAs with a special whole leaf cascade dry-hopping session. Post-hopping the beer gest transferred into firkins and dosed with fresh yeast and maple syrup from the ole family homestead (actually the first batch will be re-fermented with maple syrup from the farm up the road from ours since ours won’t be ready until late March.

I had this from a firkin. I have to say this was one of the better "minute" IPA beers from Dogfish Head. It wasn't too overdone and didn't ruin my taste buds for the rest of the night. I would have it again.

    Resin and lemon in the nose with some sweet candy notes and a hint of biscuit, maybe a touch of vanilla. Pours a light amber body with nice effevesance topped with a rocky ful white head with good retention and deent lace. Mouth is thinish for a big beer and slightly watery. Flvor profiel starts sweet, not sure I would identify maple syrup had it not said so on the label but the sweetness is there, perhaps slightly cloying. I also get a hint of ripe peach, hops present but not very bittering. Finish is dry, aftertaste is a bit astringent, alcohol is present and warming.

    I've had the Alehouse 75 many times before, but haven't been able to post a review of a DFH 75 until I got the bottle. This really is a whole 'nother critter. Clear deep amber color with a rocky thick head that leaves lots of lace. Bittersweet orange aroma with some traces of grapefruit & caramel, a little sour and yeasty. Not nearly as bitter as expected but very balanced and blended/uncomplex, which is also to say it's very sweet for the style. Not nearly as distinctive as the 60 or 90. Tingly and weighty but not very sticky for the style. I prefer the Alehouse 75.

    A bright yellow-orange colored beer with a big fluffy textured white head rising above. There's good hang time on the head. Settles into a thick ringlet and fluffs of film aside the glass. Floral nose. Nice melding of sweetness from maple and bittering from floral resiny hops. Moderate body and creaminess.

    Had the version bottle conditioned with maple syrup. Strong, very hoppy aroma definitely has a hint of maple as well as a citrus fruity touch. Pours a nice clear amber with a fairly thick pale wheat head. Hoppy, lively flavor is more fruity than bitter and has a subtle maple syrup note but is not too sweet. Smooth texture has good body and fizz. Love the label on this version! Another winner from Dogfish Head.

    I like this one. Trying to decide if better than the 90 minute. Actually a little different with the added sweetness from the maple syrup. Hopped well with good balance....but the maple really makes it quite unique for an IPA. An in-betweener from the standard 60 and stronger 90 min version. This is actually more expensive for oz. than the 90 min, but definitely worth the sample.

    Another generous sample at the #KnoxBeerCrew tasting. Amber orange pour, slight tight cream head, tight lacing. Big hopped aroma - pine and citrusy - sweet offset of malts. Big hoppy bitter flavor, kind of mellow, big pine and citrus, big sweet too. Nice to try.

    A 750 ml bottle from Dog and Bull in Croydon, poured into a Duvel tulip. This appeared as a clear copper with a large white head. This settled to a coating but left ample lacing. The nose was pine, citrus (especially lemon and orange) and some maple syrup. Taste was a nice interplay of hops and sweetness with emphasis on notes of citrus, some breadiness and the maple syrup. Body was medium, creamy and with a healthy carbonation. This is NOT a hop bomb, but a pleasant and remarkably well-balanced IPA, and it is more than just a combination of 60 and 90- minute. I like both but might like this even better than either. If I can get any more, I am eager to try this again SOON!

    interesting take an ipa (though i'd hardly call it a double). maple syrup makes for a pleasing and unique bittersweet finish. different than the brandied fruitcake of the 90 minute, but similar...and this is a lighter beer. More aggressively hopped than 60, and bottle conditioned for a different, dryer feel. pretty nice...not sure it's worth the extra coin more than very ocassionally over 60 or 90...or Squall.

    Aug. 2010 - On cask at Rehoboth. I love me some IPA on cask, so right off the bat, it’s got that going for it. Reading the description, I was hoping for more than just a blend of 60 and 90. Really, I can’t say that it was. Still, a good beer made even better by being on cask. A bit sweeter than I would’ve expected. Sweeter than 60 or fresh 90. That’s the only flaw. I really coulda used a more aggressive hop profile.
