This Trappist style ale was brewed specially for Bottleworks in the tradition of "Notre Dame de St. Remy". Filled with flavors reminiscent of figs, banana, chocolate. The quad pours a slightly cloudy brown color from a 750ml bottle. Medium to large sized white foamy head. Aroma is fruity and sweet. A medium to full bodied quad. Malts are fruity and sweet. Lots of fruits, dates and figs flavors. Brown sugar and banana. Touch of bread. Lively bright yeasts. Lots of sugars. Very smooth taste. Hides the alcohol very well. Sip and enjoy this one. Mouthfeel is full. Finish is clean and smooth. Aftertaste is clean and smooth. Aftertaste is sweet.

Poured a hazy brown color with a small, light tan head that left nice lacing on the glass. Aroma of nuts, caramel malts, spices and maple syrup. Taste of caramel malts, some roast, citrus fruits, light chocolate, nuts, and faint alcohol as well. Heavy carbonation in this one.

07.08.05 RBSG Dark amber brown with big brown head. Prune and apple and fig and pie crust. Some light cocoa. Corky. Nice.

This one smells almost like it was brewed with cinnamon like a Christmas beer it’s so spicy. There’s lots of dried fruit in the aroma, but the body seems drier than many of the other abt/quads I tasted with this one. Definite alcohol in the aroma and flavor.

This beer was sampled with numerous friends at the 12 Hour Belgian Beer Festival 2005. This beer pours a deep, clear, copper red color with a thick tanned head and moderate lacing. The aroma is mind bogglingly entrancing with figs, banana, cotton candy, chocolate (lots of chocolate), sugar candy, caramel, strawberries, and who knows what else. This beer is very complex and trust me....you really need to take your time drinking it. The flavor is full bodied with heavy chocolate grainyness, little to no alcohol presence. The chocolate is backed up by figs, wonderful bananas, and a beautiful malty background. Tongue coating chocolate grains and banana with hints of caramel are all over this beer....I’ll need to get more..this was exceptional.

Pours with a brown body topped by a thick head with lots of lacing. The aroma is sweet with candy sugar notes and some fruity notes...reminds me of cotton candy. The flavor is slightly sweet and malty with a touch of caramel and a bit of dark fruit, as well as, banana. Very nice. Full bodied and smooth.
