The term "Pale Ale" dates back to the 1800s when all beer was dark brown in colour. New malting techniques led to the development of pale malt, a barley malt kilned at low temperatures which contributed very little colour to the finished beer. Hence the birth of Pale Ale, an amber- to copper-coloured ale you could actually see through. Plenty of British Crystal malt in the grist lends this ale its rich colour, its caramel maltiness, and adds the occasional whiff of toffee to the nose. An addition of American and German hops to the kettle at the end of the boil is used to suffuse our Pale Ale with a gently spicy hop finish.

Lots of built up foamy head once bottle was opened. Has an average frothy head with thick lacing. Has a golden/light amber appearance. Floral hop aromas are dominant, as well as cascade hops. Some earthy and floral hop flavours with a fairly malty taste as well. Slight bitter and astringent mouthfeel. Good balance with sweetness and bitterness. Tingling and light warming sensation. Pretty good, more bitter than usual pale ale.

The beer pours a slightly hazed medium gold colour with a light tan coloured head. Aroma is very grassy with hints of light fruit and herbal hops. The mouthfeel is medium bodied with medium carbonation. The flavour is grassy malt, weak caramel and weak citrus notes round out the finish.

Bottle pours a hazed gold with orange highlights, 1 finger white sticky cap has moderate retention and lacing ability. Moderate carbonation, peppery mouth feel, bright citrus-pine character. Aroma is light but fragrant with pale malt and citrus peel tones. Flavour is a fine balance between sturdy pale malt sweetness and piney hop bittering, finish is clan and sharp with the bittering increasing to a nice hop bite at the end. Nice good drinking pale, I'd buy more.

A really nice beer - I really do enjoy the smell of Pale Ale's, and this one is no different. Not overpoweringly hoppy, just enough to be extremely enjoyable, unless of course over hoppiness is your thing - I can definitely taste caramel malt and cascade hops. Reminds me somewhat of Toronto's own Black Oak Pale Ale. The only let down was the pour. I see Mr. Chopz below me liked the look of his brew, maybe mine was off somehow, or I used the wrong glass, but I found it to have a very thin head that dissipated very quickly.

From the LCBO, in the BC Craft Brewers Guild Natural Selections 6-pack. They do not seem to use the word "Signature" anymore, as it is not found on the beautiful new bottle. Pours a clean amber colour with an off-white head, good retention and lots of creamy lace. A mix of caramel and fruity malt aromas. Wet mouthfeel with a mild dry finish. The light hop does linger in the aftertaste. Nicely balanced with notes of grainy malts. Quite easy to drink, like a slightly lighter American Pale Ale.
