Deep brown in colour, thin tan coloured head, some light spotty lacing. The aroma is malty, good roast, some caramel and dark fruits. The flavour also had lots of caramel malt, some spice, a bit peppery, dark fruits and light alcohol. Rich mouthfeel, medium body, medium carbonation. Finishes with a lingering rich alcohol warmth.

    An excellent beer that I'm glad I've gotten to try. The beer pours a dark reddish brown with a very thin tan coloured head. The aroma is slightly fruity (apples and plums) combined with some caramel malt and some minimal hops. The flavour isn't as sweet as the aroma would indicate but is still delicious. The hoppish bitterness at the end of each mouthfeel makes for a great beer drinking experience.

    Bottle: Poured a medium burgundy color beer with a nice medium foamy light brown head with better then average retention. Aroma of sweet dry fruits such as plums and figs. Taste is also dominated by dry fruits such as figs and plums with a nice a generous malt presence and some subtle warming alcohol. Body is slightly thin for the style with some good carbonation. While this is a good example of a style that I see too rarely it is slightly less complex then the top beer of the style.

    07.08.05 RBSG Pale amber, minimal head. Slight aroma of feet, sulfur. Not terribly appealing. Thin flavor includes mild vanilla ice cream and gym locker. Other off-fruity hints. Tangerine?? I guess this one didn’t really agree with my taste buds.

    *2004 Edition*
    Poured an attractive shade of mahogony. Aroma was not as strong as Id like at all, nice however. Flavour comes out a little flat as well, but again its ok. First impression I get is that this beer needs a little work, almost there but not quite. Enjoyable but stopped short of anything impressive. A smooth texture but I find it lacks depth and presence. I look forward to trying the 2005...
    *Second sampling, again 2004 edition, aged over 1 year*
    Enjoyed again but was far from impressed. The aging didn't seem to do much good. Alcohol absent, much like any distinctive or bold aroma and flavour I hoped for. A strong malt based flavour, very simplistic and quite light against other bocks. Marks and opinions not adjusted.

    *2005 Edition. Nicer looking, silk screened bottle. Pours with much more carbonation and better head. A big boost to the mouthfeel, lively carbonation helps. Fairly similar aroma, but perhaps a tad stronger. Another improvement. I taste some amber malt(ish) in there which seems to help fill some of the weaker spots in last years. A little more spice which lends to better flavour. A good bite on the finish. I like the 2005 much better. Far improved in my opinion.

    Pours an unexpected amber colour. Good finger width head that laces nicely. Yeasty and fruity aroma, noticeable but not overwhelming. The taste starts with a bit of grape and apple goodness, then suddenly dissappears, and when you begin to wonder what happened the finish hits you with some tasty bitterness. Malts are noticble the entire experience. Exremely smooth mouthfeel, lightly bodied with very lively carbonation. A nice brew, good for special occasions.

    my first and only experience with this type pf beer and it was wonderful. the first to the last is just an absolute pleasure. tha's all i have to say.

    My sample was from the 2004 brewing purchased at the brewery but sampled over a red sunset on Colpoy’s bay. Had a marvelous clear reddish brown with a 2 finger creamy head that lasted then went to a Belgian lace half way through the glass. Aromas are not powrful but substantial....sweet cookie dough malt tones with some light musty yeast smells and a grassy twang from the hops. The creamy body starts right away on the palate...rich chewy, full of sweet malt and spicey complexity then finishes up very mellow where the hopping takes over and there is a sweet bready after taste balanced with a slight metallic note. The overall impression is that this beer is smooth (probably the result of the ice process) I’m glad I bought 5 bottles..2 to rack for a while and 2 for sharing with friends on cooler summer evenings.....this is a nice drink.

    2004 edition - comes in a green wine bottle, but no cork, just a bottlecap. This Canadian Ice-bock pours an amber-red colour with lively tiny-bubble carbonation. The off-white head is creamy, and as it dissipates slowly, a thin layer coats the brew. The nose is roasted malts and apples. Nice creamy mouthfeel, very smooth. Taste the caramel is it is going down with the roasted malts. Good bitterness in the finish, with apple in the aftertaste. Beautiful lacing left as the brew goes down... and it goes down easy. I would try this anytime... as long as I am not driving.
