The opportunity to create my own recipe and have it on tap at 3 Brasseurs is always an amazing experience. I take the opportunity to brew unique and unusual beers that are either new to me, or as a brewer, represent a technical challenge. This year I brewed a Black IPA, which is officially recognized as a Cascadian Dark Ale. The origin of this style is the West Coast, and the unique style is a hybrid between a Porter and an India Pale Ale. Using 3 different American hops, and by dry hopping, the result is floral, with a light touch of citrus and conifer. I’ve added a small personal touch that’s almost undetectable – rye. It’s a little nod to my family and the artisans in my home town who have cultivated rye for generations. If you like bitter and hoppy brews, this is one for you.

    Pours a dark brown colour with cola highlights, big creamy beige head, good retention and thick lace. Grassy hop notes aromas with roasted malts, hints of caramel and molasses. The taste is a little more bitter that the roasted malts. The mouthfeel has a nice dryness and bitterness that lingers. A pretty good hoppy brew for those who prefer their black IPAs with more hops, less roasted malts.
