Hops emerge from the dark in this unique ale. Named after the Cascadia region, it balances dark-roasted malts with a blend of hops known as Falconer's Flight. This style of beer could also be described as a dark India Pale Ale. The term may be a contradiction but the flavour is definitively Pacific Northwest. Enjoy on its own or paired with braised short ribs.

Dark brown with a modest creamy, ivory head; no lacing or ring provided. Nose had roasted malt, and was that hop as well? Hard to tell, really. Flavour began with mostly malt, but eventually the hops did arrive. Mouthfeel above average. Bitter finish. I'm not such a big fan of this style.
