From the tradition started by the monks of St. Francis of Paula in 1634 comes this warming beer of rich heritage. A dark, rich lager of sublime complexity and character, St. Victorious is created from multiple German malts. Laborious decoction mashing yields the choicest elements of the malt. Bottle: Poured a medium brown color ale with a large off-white foamy head with good retention and minimal lacing. Aroma of caramel malt and light toffee is enjoyable though not necessarily what I was expecting from a doppelbock. Taste is also dominated by sweet caramel malt notes with light toffee notes as well. Some notes of banana bread would have complemented well this beer. Body is about average with good carbonation and no apparent alcohol. Well done though lacking usual ester.

A brisk pour produces a frothy, fat-one-finger thick, tan colored head that sits on top of a dark, deeply concentrated, amber colored beer. When held up to the light, the beer shows a lightly hazy, dark cranberry color. Ah, what a rich and malt aroma; concentrated, richly caramelized malt flavors mix with drier, toasted malt notes of biscuits and whole grain bread crust. This is malty enough that it is starting to pick up those malt notes that lean towards soy sauce (though definitely not this) flavors that are umami like. At times the malt has a touch of dark fruitiness to it that is reminiscent to something that is a cross between raisins and concentrated pear.
Sweet tasting, though not cloying. It is a touch lighter bodied than I was expecting, but it is rich with a full heft to it. Interesting notes of bitter cocoa and dusty browned malt come through in the middle and linger on through to the finish. Herbal hop notes play a supporting, but noticeable role here as does a hop bitterness that provides an anchoring note towards the finish. Malt, hop and carbonation notes combine in the finish to give this beer a light astringency. Dark, caramelized malt sugars provide flavors of brown sugar, hints of molasses, flavors from that slightly burnt syrupy drippings left in the pan after baking a black, holiday, sweet bread / cake.
The taste does not quite live up to the rich promise of the aroma, but it certainly gives it a go. A thoroughly enjoyable beer that is fitting my current mood / needs just right. -

12 oz bottle. Pours a ruby red with a creamy off white head that retains well and laces the glass.
The aroma is very subdued - some sweet and smoky malts.
The flavor is sweet and sugary candy and some dark fruits followed by a grassy bitterness. The mouthfeel is medium to full with nice carbonation.
Overall, a decent beer, but nothing too special. I'd go with Fort Collins' Rauchator over this any day. -

Wonderful dark copper pour with ample head, good retention, and nice lacing. Delicately balanced and fully malty tonies. Full flavor with carmelly-nutty finish.

Pours a fuzzy brown with a very thin head. No substantial lacing. Aroma is grassy, mouthfeel thin, flavor is of dark fruit with a malty sweet after. A bit too sweet on finish for me.

Poured a brown with redish edges with a small tan head which laced well. Aroma was of weak caramel and some spices and maybe some cherry. Flavor was caramel, roasted, little smoke and some hops. Mouthfeel was a little thin.

This one is a dark, clear reddish brown with a thin, dark cream-colored head. The aroma is very malty, low hops. The malty body is sweet, with caramel, a touch of brown sugar and a very light oakiness. This is a very easy-drinking beer.

I could practically rewrite my review of the Smuttonator imposter doppelbock that I had in the recent past, except for the fact that this didn't even smell like much of a doppelbock. Reddish brown color with a nice tan head that laced well. Aroma was hard to discern, maybe some caramel and spices. The flavor was caramel, bread, spicing, and a dominant grassy hop finish, leaving the tounge with a hoppy sensation. Alcohol hid well, but the mouthfeel was quite thin for the style. I want richer and darker, sorry. Just average, maybe I was a bit generous on this.

thx to secret santa for this beauty: Dark reddish brown with a thin off white head. Sticky sweet flavor. Easy drinking, it's not as full bodies as other doppelbocks I've had, but I hope that victory continues to bottle this

Looks like a prune. Very little head give at all, just a light off white wash in the corners of the glass. Weird aroma that is just like a bag of cat food, warm cooked carrots. The body is of wet grass-a big mouthful of it at that. Some light brown sugars in the end too.
