Up the Creek is mashed at a low temperature to increase the amount of fermentable sugars while reducing residual sweetness. This creates a hoppy behemoth of a beer with its alcohol well hidden. UTC is designed to be dangerously drinkable, so use caution or you’ll find yourself Up the Creek!

didn't know TC did big beers .. . pours a medium copper .. . medium head, medium lacing .. . light sap, salty pine, and medium sweet malt .. . light sticky mouth .. .an alright brew .. . . In all fairness, jay, his baseball cap does have a picture of a cowboy hat on it.

First beer from SC! Bought at Stop n' Shop, Coral Gables FL. Pours a darker than dark clear amber under a creamy, solid tan head. Nice retention here. Aroma has lots of hops and malt, as well as alcohol. Are they sure this isn't a barleywine? Flavour sure tasted like a BW, again lots of hops and malt and of course, the alcohol. Very sturdy mouthfeel and balanced finish. Bigger bottle next time, please.

This is labeled an imperial IPA but it looks, smells and tastes more like a barleywine. As an IIPA, this is disappointing--too much alcohol showing through and an absence of grassy or floral or citrus hops in the aroma. As a barleywine, it would be pretty good; plenty of caramel malt keeps things in place but again, the alcohol was a little too evident in both aroma and flavor.

On pour it is a bright red that settles into a darker mahogany colored beer once settled. A big frothy textured, light beige head rises robustly above. There's pretty good hang time. It settles eventually into a moderate ringlet and splotches of film. Nice blending of citric hops and caramel malt. Really well crafted. Full bodied, well carbonated and smooth.

A big, bold IPA. Pours deep copper-amber with a thin to moderate head that lingers and laces well. Huge citrus/hops aroma and flavors to match with a hint of resin and malt. Medium-bodied - and bold.

Bottled@Bishops Arms Vasagatan, Stockholm. Very deep ruby colour, small beige head. Bigtime hops and some alcoholic sweetness in the aroma. Flavour is fruity and floral sweet hops which balance very well with a quite malty body. Alcohol mixes in rather well with the big hoppyness. As it warms up it gets some slight honeyish notes as well.

Aroma is fairly hoppy with firm tones of grapefruit and, interestingly enough, yeast and honey sweetness. It pours a dark, slightly hazy mahogany with an average light tan head, not what I expect in an IPA. Flavor is - WOO! It hits the tongue like an 18-wheeler on a patch of black ice with a strong hoppy and woody overtone, as well as good hop bitterness and undertone of honey with a bit of molasses mixed in. Texture is quite tingly and leaves a woody, slightly sweet finish with a good fizz.

Welcome to New years eve.. This was my first beer last night and it did not disappoint. This beer will knock on you behind if you are not ready. This brew is huge oh sorry... HUGE
Smells of sugar, hops, citrus fruit, pine, yeast. Pours A very dark reddish brown with a tone of head. Full body beer here with a smooth but big finish and carbonation was pleasing. This beer is one big hop wallop with a ton of sweetness. oddly enough it is balanced and east to drink. What a fun find.. -

This beer pours a dark copper color with a slightly off white head that stays around and leaves nice lacing. The aroma is not overly strong but there is a nice fruity hop aroma. The mouthfeel is nice and full and the taste is sweet and hoppy. I have to agree with bluesandbarbq this does remind me of DFH 90 min and living in Alabma where I cannot get DFH it is great to have this around.

Super Big IPA from Thomas Creek - kind of a surprise coming from them. Hazy deep tea brown pour with a sustained creamy head and lots of lacing. Big ripe peach hops, sweet malts, dankness in the aroma. Whoopee Tie Yi Ya taste with big heavy dank peachy and citrus hops kickin' with a big dose of sweet malts. More pine hops present as it warms. Very similar to DFH 90. What a nice find from my birthday trip to Asheville and Bruisin' Ales. Next time I will buy more of this one to share!
