The Moinette biologique is a top fermentation, blond beer with refermentation in the bottle. It was created in 1990 and together with the “Saison bio”, one of the first two organic beers. The Moinette biologique has the combination of malt aromas, fruitiness and fine hops. It is very thirst-quenchening and has a fine balance between mellowness, fruitiness and bitterness. The long refermentation in the bottle ends up in a very complex beer.

Also known as Moinette Biologique. I wasn't crazy about this beer. I don't know if there wasn't enough colour (hazy pale yellow), enough musk in the aroma, or enough earthiness in the flavour, but it missed at all the checkpoints.

Nov. 2009 - Thanksgiving Dinner 2009 beer. Light colored, foamy head. Lots of spices and funkiness to go with a very dry mouthfeel. Very mild sweetness. Not a bad beer, but nothing to make me fall over with delight.

A dull orange golden colored beer. Lots of bubbles dancing in the body. Medium creamy textured white head rises above. Some hang time settling into a light ringlet cap atop the body. Sour, yeasty, pepper and lemon all combine in the aroma. The citrus hops and pepper spicing are evident in the tasting as well. But this one is holding back. Enough flavor, not overpowering in a medium bodied beer to make this a good drink.

Pours a murky, hazy orange kinda similar to cider, not too much head or lace. Lots of fruit, spices, and yeast. Nicely blended, alcohol is not noticeable in the taste, but in the effect. Overall its pretty decent, and worth a try.

Vibrant golden yellow body with a sizable head and good lacing. Faint aroma of grass, citrus and yeast. Light on the palate with a slightly empty finish. Mildly fruity with a lemon flavor followed by plain biscuits and a small amount of noble hops. A touch yeasty, but overall kind of lackluster for a Saison.

A very nice saison, although the mouthfeel kills it a little for me with the over-carbonated pricklyness of it. Aroma has tons of bubblegum, floral/herbal hops, light fruits, and some dustyness. Body has some honey/lemony tea thing going on. Apple juice, lemons, some light peppery notes. Nice saison.

Pours an apricot color and appears like a nectar - sticky and rich with white head and average lace. Sediment is visible in the body. Fragrant aroma of citrus, apricot, bananas, and mild spice. The mouthfeel is smooth, rich, and full-bodied. Flavors largely are caramel malts, citrus, mints, and spices. Very good!

Bottle: Poured a dirty yellow/beige color ale with a huge pure white foamy head with great retention and some lacing. Aroma of bready yeast with some nice floral Belgian malt notes but not as many hops as the vieille provision. Taste was a nice combination between some floral Belgian malt with some bready yeast which also provided a slightly spicy finish. Full body with some great carbonation and no apparent alcohol. Another great beer from this fine brewery.

Bottled (7.5%, as Moinette Biologique). Hazy orange colour, big fluffy head. Aroma wheat, hops and some sugar. Flavour is hops, malts, yeast and some earthy and ginsengic notes. Very weird mix, but still very refreshing.

An incredibly thick white conglomeration of suds sits on top of the slightly foggy dark yellowish liquid before melting to a 1/4 inch leave. As I emptied the bottle, I did notice a fair amount of yeast sediment in the glass. Interesting aromas of malt, spice and nuts waft from the confines. On the buds, Foret is clean, earthy, spicy, smooth and light. Not very impressive in many respects, but it is very drinkable. Not a bad saison, but not my favorite either. I do have to add that mine may have been a wee bit skunky!
