The yeast strain used for the brewing of the pale, dry, American Ales was specially imported from the USA, along with some Chinook and Centennial hops, to produce this pale ale. The low colour Maris Otter malt provides a perfect light colour and dryness to complement the crisp taste and full aroma of the hops.

Nov. 2016: 330 ml can, as Dark Star APA, from Ales by Mail. ABV is 4.7%. Overcarbonated, slightly gushing can, the glass fills completely by white foam. When the beer appears underneath, it is pale golden. The huge head lasts "forever". Strong and pleasant aroma of fruity and piney American hops. Distinctly hoppy flavour on a moderately sweet base, tropical fruits, grapefruit, pine needles and resin. Bitter finish.

Casked. Golden colour, mediumsized white bubbly head, which lasts long. Sweet fruity aroma with caramellish hints. Flavour sweet fruity with enormous hoppiness. Also some oaky and spicy hints there. Wellbalanced and pleasant cask, smooth palate.

Pours out in a clear pale golden colour, topped with a low but firm white foam. Crisp and hoppy aroma of grapefruit and lemon-zest. Fairly light-bodied with a smooth cotton-like mouthfeel. The flavour contains loads of green and grapefruity hops with a really bitter finish of wet grass. Light bready notes in the background. An extremely drinkable and quite bitter example of the style.
