This beer is brewed with a complex addition of specialty malts. The brew consists of caramel malt (which is barley that has been caramelized in sugars from barley starch), and roasted barley that is toasted under direct heat. Flaked wheat is added for body and flavor. The barley is brewed using a temperature controlled step mash. In doing this, we utilize the proteins and enzymes necessary to convert sugars for fermentation. The red color comes from this combination of malt. Red River Trail Ale’s bitterness comes from a large first hop addition of Willamette at the beginning of the boil. At the end of the boil Alsace hops are added for aroma. The water for this beer comes from a fresh water glacial spring which is some of the best water in the world for brewing beer.

    Part of a 4-beer sampler. Like the other Cold Springs beers I've tried, this is most notably plain. Unlike some of the others, I didn't expect much more. Sweet but drinkable but unexciting.
