One of the first beers I brewed after moving out to California to begin my brewing education was a Pale Ale. This version is a true testament to the influences the Wild West had on my early brewing. My Pale Ale is loaded with US-grown Cascade, Crystal, and Columbus hops, so be sure to take a good sniff to enjoy their robust aromas before taking your first sip. Sensory Profile: An aromatic beer with notes of citrus, pine, a noticeable bitterness, and a touch of malty backbone to help balance it out. Food Pairing: Foods with a spicy kick are a great match, as the bitterness of the hops will help to cool the palate before your next bite. Mexican food and pizza are natural matches. I had this beer at TONIC in NYC, Times Square. This beer was one of the few moicro brews on draft. Not bad. The hops were piney and the body was about right. I enjoyed it.

Aroma, well had this in a wood fired pizza joint so it was tuff to tell, some pine, some malty sweetness. Pretty looking beer, average copper color, very nice head with very good lacing. Mouth is pretty full bodied and nicely slick with a fairly low level of tingle which is appropriate for the style. Flavor is buttery and musty which is again appropriate for the style. There is a (I think) stronger malt backbone to this then the brewer's description mentions, again appropriate to the style as it befits its English Pale birth line. It is more heavily hopped than an English Pale, some flavoring hops but predominately bittering hops. The finish if both bitter and slightly malty-sweet. This is very high on my list of American Pales,perhaps the leader.

Delicious beer that had a good balance of hops and malts. Beautiful medium bodied golden colored ale with a white head that did not dissipate quickly. A nice citrus, flower like essence on the nose and this is a beer worth seeking out to drink.
