Cascadian Dark Ale (aka Black IPA) was brewed with Carafa, Dark Crystal and Chocolate Rye malts to achieve the requisite color and mild roasted flavors. The hops were not too hard to decide on as this style started in the Pacific Northwest. Columbus, Apollo and Bravo were used throughout the boil with a large charge of all three for dry hopping. The blending of rich dark malts with large quantities of citrusy American hop varieties provides a unique taste that separates the style from other dark beers like Stouts and Porters.
