The Bourgogne des Flandres Brune, produced at the legendary Timmermans brewery, benefits from a unique, ancient brewing technique known as ‘lambic infusion’. In this process, a selection of the best lambics is blended with a top-fermented brown ale.     330 ml capped bottle. Poured an unfiltered and opaque dark brown-red FOB with a short two fingers tan foamy head that had a long retention and tons of micro bubbles. Low carbonation. Some lacing. The aroma is marked sourish red fruits, cherries and old wood. The flavour is aciditic fruits, cherries, lemon, apples, noticeable brown sugar and caramel tones. The mouthfeel is crispy, sparkling, quite thick and sugary-sourish (!). This medium bodied FBO has a dry sourish fruits finish. The sugary side contests the expected sourish dominant feature and the result is an interesting Flanders Oude Bruin.
