Over the ages the term ’cellar door’ has numerously been referred to as the most beautiful term in the English language. upon setting out to create the first summer addition to the Stateside line up of ales; the feeling that almost instantly came to me was that of beauty & cleansing. many summer offerings tend to lack the complexity of their bigger, colder season counterparts; so my goal was to craft an ale of extreme balance with a delicate complexity that allows for contemplation while also providing quaffable refreshment. starting with a base of German wheat & pale malts this crisp slightly hazy foundation was then accented with a blend of Sterling & Citra hops providing a intricate blend of herbal grass & tangerine citrus flavors and aroma. to pull this all together and to complete the ’cleansing’ aspect of my vision i gently finished the ale off with a touch of white sage, lending a mild earthy spice character to the blend. of course let’s not forget our house saison yeast that brought all the elements together leaving a dry yet intricate finish.

The Beerbistro (Toronto, Ontario, Canada)
June 17, 2015
The beer pours a slightly hazed dark gold with a snow white head and mild effervescence. The aroma was very fruity with notes of spices, yeast, and some earthiness. The mouthfeel was light to medium bodied with average carbonation. The flavour was light fruit with hints of ginger, sage, pepper, yeast, and grass. If only the aroma was as good as the flavour. -

Comes out of the bottle a slightly hazy, pretty solar yellow with a nice thick white head. Malty aroma has a decided overtone of sage - oh yes, you can smell that, and it makes this beer all the more appealing! OK, on to tasting - yummy! Malty, fruity, earthy, with that sage overtone that makes it distinctive. Notes of banana and pear enhance the sweetness without making it too sweet. I do not like beer that is over-sweet! Body is about average, but it is fairly fizzy and leaves a nice malty finish with an overtone of that sage. Open this cellar door to a fine brew.

Light hazed golden straw pour, tight head, some lacing. Floral yeasty orange nose and initial palate, very lightly funky, some black pepper spiciness, floral and herbal hops presence. Nice Saison.

A cloudy orange in colored beer with a small, one fingered soapy textured, off white head rising briefly above. A thin ringlet is left behind. The profile is impressive in complexity. Sage herbed, yeasty, fruity sitting in a sweet bready malt base. Light-medium, effervescent, refreshing.

12 oz bottle, dated 4/23/13. Pours slightly hazy golden yellow with a small white head that quickly disappears.
The aroma is wheaty malts with some ripe citric fruit and spices (sage) and some earthy yeast.
The flavor is sweet floral soapy malts with some fruit, earthiness and sage. The mouthfeel is medium bodied with low carbonation.
Overall, interesting saison, but a bit flat, overly spiced and a bit soapy. -

"touch" of white sage my butt! that was the dominating factor in the aroma and flavor. quite pleasant, but a surprisingly one-trick pony. on tap, so i was saved from another gusher. nice medium-full mouthfeel, even with the prickly carbonation. a little yeast and sweetness in the background, but this beer showcased the sage without being as funky or saison-like as the other Stillwater brews I've had. 7/12 - hops (good) + carbonation (bad) come through more in the bottle. More complex in aroma and flavor, but the feel suffers, too gassy.

CPH BF 2011. Golden colour, small head. Aroma is sweet fruits, some mild soapy notes along with mild yeast, earth and herbs. Flavour is quite similar. Good attempt, but I felt this was a bit too clean and fruity to be really nice.

Sampled on 10/29/2010. This Saison pours a slightly hazy medium orange gold color from a 750ml bottle. Medium to large sized white foamy head, with decent retention and nice lacing. The aroma is fruity, sweet, spicy and herbal. A medium bodied saison. The malts are fruity and sweet, predominately orange, apricot and peach. The hops are herbal and spicy. Lively carbonation. The sage flavors are fairly noticeable, more in the taste than in the aroma. Very drinkable saison. Mouthfeel is full and round. Finish is clean and smooth. Aftertaste is slightly sweet.
