Onyx is a second generation fermentation in Pinot Noir barrels subsequently filled with spirits. The whiskey was then drained and the barrels were refilled with our black "double" IPA. Nearly twice the alcohol and bitterness. Notes of sherry, chocolate, roast barley, and toasted oak. As one would expect, a hint of smooth rye whiskey on the lingering palate.
