Murky brown color with thin vanishing off white head. Aroma is sugary, toffee, molasses and a hint of spice. Thick chewy mouth feel. It has explosive carbonation. Flavor is very smooth and sweet sugar (maybe beets), molasses and a bit of toffee. Along the edge of my tongue are spicy flavor notes. Good beer. Too sweet for my taste. If given a choice between the 8 and the 6 the 6 wins easily.

C: Deep Mahogany, ruby highlights, long lasting generous head
A: Dark fruit, chocolate. Roasted malt
P: Full Bodied
F: Nicely balanced, not as sweet as the 10 with the dark fruits showing more than the sugar
O: All three Rochefort beers are pretty much identical (they start out as the same virgin batch) but the length of time they leave the batch in the vat really allows the beer to improve leaving the 10 a much better beer than the 6

I've drank Rochefort 8 many ,many times over the years , just last Sat I had a session of five bottles of these @ a local boozer (pub) . I could say this is captivating but you know that or that it's as smooth as criminal and you should know that too. Smooth, addictive, complex, yet friendly and God damn flavourful :That's Rochefort 8 as an experience. It pours out a Brown liquid ,with a good looking beige head: the aroma points @ raisin.dark cherry. milk chocolate. spicy floral hops(when fresh) Drinking this fine beer you receive a powerful smack of rich intense dark complex flavours. Boozy dark fruits. The smooth chocolate notes. A good dry backdrop stops it getting overly cloying. A damn ,damn great beer : this kinda complexity is actually pretty simple : It kicks ass!!

Pours a foamy beige head and has a copper/light brown appearance with sediments clearly visible. Fairly weak lacing. Nutty and toasty aromas with some mild earthy and spiced hops. Flavours of Belgian yeast, mild roasted malts, some notes of coffee and earthy/resin hops. Also some hints of raisins and a bit of toasty malts and toffee in the finish. Slick and warming sensation. Smooth and slightly creamy mouthfeel. Pretty lively carbonation. Full bodied and medium retention. Really good Trappist but preferred the 10.

Rich ruddy brown, just a little hazy, big head. Dusty but rich aroma, yeasty with hints of warm baguette and sun dried fruits. (Reminds me of the alfalfa flakes I used to feed goats.) More powerful flavor than the Rochefort 6: breadier, fruitier, and even drier, but with fewer "moments" per sip. The great yeast of a Belgian, of course, but also something musty, earthy, and grassy. It's like a Belgian Quad and an Irish ale got together and created a new genre for me, and I need to do a lot more thinking about this one. In fact, I'm going to call this a "thinky" beer. Tingly bubbles, a little heft (as one might expect from the flavor).

Cloudy dark copper red robe, nice tan and dense head. Strong bitterness although not overwhelming. Long finish. Very carbonated. Absolutely a must try. One of the top beers evaluated here. Not the absolute best beer for me but a strong contender nonetheless.

The second Rochefort beer I've tried and every bit as good as the 10. If I have one complaint is that the aroma wasn't as sweet as the 10, but almost identical to the 6 (tried a couple of hours later). But, I could drink any of these all day long (and all night)

Pours a slightly cloudy amber with a massive bubbly head that quickly raises from the bottom exposing the severely carbonated brew. Aroma is of apple cider with a hint of wine that reminds me of a white zinfandel. Has a tornado of sediment fighting about with the ridiculous about of bubbles coming from the bottom of the glass. Taste is instantly dry aft it touches the tongue, hints of fruits and dry malts. Alcohol is surprisingly mild and is only noticeable for a split second then it disappears. Finishes off dry and a tad fruity. With a champagne texture and mouth feel combined with the slight tartness of a cider and the dryness of a wine, this beer can be hard to beat. Very well done.

Dark ruby somewhat hazy, slightly brown colored foam head. Sweet bitter smell and taste is similar. Bit too sweet, too much yeast in bottle also. I definately like the 10 better. (Velp 201205)

Pours a dark murky brown colour. Small off-white head that dissipates quickly, Leaves no lacing. Smells of brown sugar, dark fruits and raisins. Flavour is sweet, very fruity, a little spiciness and yeast. Medium mouthfeel, full bodied with a moderate carbonation. Good but big brother is next.
