To get a subtle smokiness we brew with Scottish peated whisky malt, English pale and roasted malts and boil only whole leaf goldings hops. Querkus is then patiently cold matured over pieces of old French oak barrels. The flavours from the toasted wood slowly seep into the beer.

    I'm generally not a big fan of Ridgeway beers, but they did all right by me on this one. A rather thin body is the beer's only fault, but the lightish but well done smoke and roast is done so well, it's easily forgiveable. Very smooth easy drinking brew that will scratch the itch for smoke.

    A strong reddish tinge in the brown colored beer as I pour. Once settled the brown darkens. A moderate frothy textured beige colored head rises above. There's some hang time to the head. It settles in some low lying film and moderate ringlet/cap. The profile at room temperature is smokey roastiness. Bittering from the chocolate-roasted malt. Too light a body, though.

    Pours a dark, semi-transparent cinnamon brown with a decent and fairly persistent pale beige head - looks more like a brown ale than a porter. Aroma, though, is very much what I expect from a porter: smoky with hints of wood, unsweet chocolate, miso and molasses. Flavor is smoky with a definite oaky undertone and tones of roast coffee, nuts and unsweet chocolate - a bit on the thin side, but still enjoyable. Texture is smooth, a teensy watery and minimally fizzy, leaving a nice smoky finish.
