Brassée avec un mélange de grains et une levure de type “saison”, cette bière est un assemblage de saison vieillie entre 8 et 12 mois en fûts de vin avec des bactéries lactiques acidifiantes. Après une refermentation en bouteille, le résultat est une bière sèche, acidulée et complexe.

At first pour, was mildly hazy, bright golden-yellow colour and the beautiful tiny-bubble carbonation was visible. At last pour, the beer is cloudy with orange hue and light particles floating around. The head is off-white warm, with some creaminess, long lasting and good lacing. The nose has some sourness reminding me of Brett, but not a yeast strain, but the lactic acid bacteria - which does not give out earthiness. Floral notes with mild citrus aromas. The taste gives out the sourness, but not too crazy, well-blending with the fruity malts. Hard to feel the Saison yeast in this one. The wine barrel does not give oak notes, but seems to blend well with the sour notes. Light tartiness on the tongue and a little dry. Very nicely brewed beer, if you do not expect your regular Saison.
