This beer started off with Columbus leaf hops in the whirlpool and began fermenting with a Vermont ale yeast strain. The Columbus lends some piney and citrus notes, while the ale strain adds some subtle peachy/apricot flavours. Approximately half way through fermentation we pitched one of our farmhouse yeast strains to ferment this beer out bone dry, just how we like it. The farmhouse strain can be detected as the beer warms, bringing out some of the peppery characteristics. The beer was finished off with loads of dry-hops: Simcoe & Citra. The dry-hopping ups the aromatics and brings more tropical citrus flavours, pine, grapefruit, etc.
