This hoppy pale ale starts out as 30th Street Pale Ale and then undergoes Spanish cedar aging. Wood aging imparts an intense cedar aroma which dominates the dry hop. The flavor contributions from the Spanish cedar include peppercorn spiciness and a tannic dry mouth feel that makes the hop flavor and bitterness linger in the finish. Comes out of tap slightly hazy golden with a thick buff head. Aroma has strong hoppy and hay notes riding a fruity and malty undertone. Flavor is very hoppy, very like an IPA, with notes of hay, malt and pear, just a little fresh-cut evergreen bitterness. Texture is firm, smooth yet lively. If you cedar tap handle, ask for a crater.
