While traveling in Belgium, we visited an abbey that was surrounded by great legends and folklore. We were lucky enough to hear their story and enjoy the great beer they brew. We wanted to share what we’d heard and tasted, so we created Matilda. Matilda is made with a rare yeast that suggests a fruity and spicy flavor. There is complex maltiness balanced with a profuse amount of hops making it a great beer to enjoy with a plate of fresh mussels.

A little sticky in on the mouth, Looks good, but the head doesn't last long, and it's a tad sour. Still pretty good though, and while they are somewhat interchangeable, Sophie is overall better.

Gosh!! this brew is good- Just quick pass by my local brew perveyour and found this on the shelf. Nice orangy copper pour , a smallish head. Brewed Jun 2014. 6 mo. old- says you can lay it down for five years. I couldn't wait that long. Plum and fruit in the nose and on the palate. Clean dry finish-- this get a big plus for more later! This is very close to my all time favorite- ORVAL.

(I will have to rerate with a new bottle at some point, this one must have been off, label Oct 2014, abc upped to 7%))A bit winey in the nose, lots of hay, vanilla, apple, licorice, subtle clove. Medium peachy/amber clear body topped with minimal head that lasts well and laces OK. Mouth is surprisingly creamy yet a bit light bodied. Oh God, the flavor... this is just not right!!!! Bubblegum and clove are followed immediately by a really nasty hit... what is it??? Motor oil? Aspirin? Ends with an artificial-tasting sour note. This is on Odd duck from Goose Island.

Pours deep honey colored with a single-digit white head that settles quickly to a thin ring. Decent lacing that lingers. Nicely carbonated. Aroma is fruity with some spicy clove. Light malty & yeasty aroma. Medium body. Clean finish.

Wine bottle from BCLDB Willowbrook. Light amber pour, and yes, it DID resemble honey, with an active foamy beige head. Generously carbonated. Spicy and yeasty aroma, proper mouthfeel. Nice flavour, bit of caramel malt sweetness at the finish. Well done.

Pours and looks like most Belgium styles. Gold in color cloudy and unfiltered looking with white head that disappears quickly.Aroma is of malt,wheat and fruit. The flavor has balanced hop taste without any real bitterness.

Single from the LCBO in a brown wine bottle with a plastic sleeve over the cap, 2013 written on it. Pours an amber colour with loads of tiny particles. The warm frothy head has decent retention and gives out nice sticky lace. Very sour aromas like a lambic with notes of fruity malts and Belgian Ale yeast. Oh wow... was expecting the sourness to continue in the taste, but no. Just the fruity malt and mild yeast. Actually, pretty floral overall in the mouth. Still can't believe the sour nose does not show at all in the taste. As it breathes, the sourness seems to calm down and spices come out (even light cherries in the aromas). A decent Belgian-style ale, but a little too all over the place. Probably gets better with time.

Pours a lightly hazed deep gold ale with puffy white cap that lasts a while and reduces to a surface lace. Medium carbonation from bottle conditioned priming. Aroma is demure but it has pleasant apricot tones riding over some musty hop notes and a hint of sweetness. Flavour follows aroma with the fruity-apricot flavor meeting some spice and earthiness, malts are found in the finish - odd but different and pleasant. A decent rendition of a Belgian pale that has promise for improvement with cellaring.

Pours a translucent golden red with a very thin layer of light tan colured bubbles for a head. Aroma is tart cherries, funk, and yeast..........very saison-like. Mouthfeel is medium bodied with average carbonation. Tart fruits and yeast domninate the flavour with some spiciness and herbal notes rounding it out. -

Pours with a good frothy white head of roughly about one and one-half finger thickness. The head soon disappears into a thin layer. Decent lacing that stays for a while. A few bubbles rising occasionally. Aroma has fruity notes, with some spicy and clove like components to it. Good strength. slight malt aroma. Yeast is felt in the nose as well.Huge on fruity taste as well. Dry and low on sweetness, a balanced finish. Very smooth. Medium bodied feel. Dry finish. Good easy drinkability.
