This is an exciting new style of beer that we call Irish Pale Ale. This delicious beer is pale in colour, has a full well balanced hop flavour and aroma, a good foamy head, a carbonation level similar to standard lagers. Now you can, of course, make it as complicated as you like by adding various chemicals and preservatives to the beer so that it ferments and matures faster, has a longer shelf life and is cheaper to produce. However, as a small independent craft brewery, we believe in using traditional techniques and think that only the four basic ingredients of beer should be used to produce this wonderful, thirst quenching, “magic potion”. All we want to do is produce a pure and natural beer for the Galway market. Nothing more.

Cask at the GBBF 2008, gravity dispense. Yellow colour, minimal head. Moderate aroma with hints of honey and flowery hops. Reasonably hoppy flavour, hints of citrus, "dusty" hops in the finish. OK, but not really that impressive. Nice hoppy aftertaste though.

Draft at Bull and Cork, Dublin. The pour was golden-amber with a good head showing, lacing that followed true to the style, rings all the way down. The aroma was light citrus and grapefruits over top of grainy malts. The flavor was citrus/grapefruit over top of grainy and herbal malts, light resinous finish. Dry carbonated and hopped finish. This beer was more typical of an American Pale than IPA, fairly balanced, yet quite good. I'm rating it as such.
