The Beer Universe is Expanding! SuperCollider Double IPA is the antimatter to uninspired IPAs. Meddling with the limits of regular Ontario IPAs, the Flying Monkeys brewed a double that blows a black hole in the taste buds of our IPA lovers. Poured a deep copper colour with a large foamy head with great retention and lacing. Quite a powerful aroma and flavour. Caromel malts, spices, not as hoppy as you would expect from a dipa. More like a strong ale. Typical odd flavour from this brewer but in this case it works for me. Open to debate but this older bottle tasted better than the fresh.

Bomber from the LCBO. Pours a clean deep amber colour with an off-white frothy head that goes down slowly and leaves good lace. Aromas are all-over, with some roasted malts, some sweet ones, some alcohol, some dark fruits and something that smell weird... like food gone bad (soya sauce-like). I can see slight residue around the opening of the bottle, so not sure if some air got in, as some of the brew got out. Not as bitter as I expected. Hard to concentrate on the taste (as the smell is really repulsing me). I still gave it a decent note (as the rest of the scent is good). Goes down quite easy and the lingering aftertaste is actually really (well-balanced between the dryness and bitterness). The roasted malt comes out way after, and this comes and saves this one for me.

This is a double that has both Cascadian character and DIPA robustness and potency. Pours a murky burnished copper color in the glass. Produces an ample puffy 3 finger off white cap that lasts well and laces the glass. Moderate natural carbonation. Aroma is both floral and citrusy with fruit, both roast and sweet malt some earthy tones – promises a bit of complexity to come. Alcohol aromas increase as it warms and add to the pungency. Rich chewy mouth feel, medium bodied, robust character. Flavor profile is like a runaway freight train – huge blast of alpha resins in front, big pine/herbal hop blast is nicely balanced with the ample malt back bone. It’s hard to tell if there is any complexity in this beer (although I’m sure there is) because when fresh this beer is so aggressive (although well balanced)…all the same I get wee hints of mint and some fruitiness trying to break through the alpha wall. Finish is a sharp clean bitterness that satisfies your alpha lust without melting the enamel off your teeth and later a deep warming from the alcohol . This actually well made and satisfying in that the balance is great for a 160 IBU brew and the bittering is not piercing or offensive. I will cellar a few of these to see if I can bring out any of that complexity and tame the “hotness” of the alcohol on the young brew. If there is a fault it is that I would like a bit more roast in the flavor.

I tried this beer on October 22, 2011 after purchasing from the Yonge/Wellesley LCBO outlet in Toronto, Ontario, Canada. The beer poured a translucent rusty red colour with a very thin tan coloured cap. The aroma was overwhelmingly grapefruity hops, although after a while, some sweet malty hints poked through. The mouthfeel was medium to full bodied, somewhat 'chewy' with medium carbonation. The flavour was similar to the aroma with the sweet caramellish notes a little more prevalent among the grapefruit flavours.
