Take a step back in time and enjoy the flavors of this popular Medieval Elixir. Our Mead is made with similar recipes used in Medieval Times. The honey for this specialty dessert-style wine is produced in hives throughout Northern California. It is composed of a blend of three types of honey: alfalfa, sage and orange blossom. Each type brings a unique quality to the blend and contributes to the overall complexity of the Mead. Alfalfa is neutral in flavor but yields a dark, amber color. The orange blossom brings a floral bouquet to the nose of the wine. Sage brings subtle nuances into the blend. This wine is produced utilizing fresh honey without the addition of artificial flavorings, concentrates or artificial colorings. The use of pure, raw honey contributes to the intense, fresh flavors of this natural product. CHAUCER'S CELLARS, part of BARGETTO WINERY has been producing elegant dessert-style fruit wines since 1964.

not much experience with mead. I had heard of it's history and tried it at the Georgia ren fest. It was wonderful. You could almost close your eyes and go back in time... 2 glasses and then it hits you.. It is a sleeper.. so smooth you dont realize it does have a bit of a kick. Will definetly purchase again. hard to find though.

The first mead I ever tried, over 20 years ago, and I am reviewing it for the first time now. Golden yellow and clear, I chucked the mulling spices and served this cold. Aroma is sweet and... minty? Yep, like mead mixed with wintergreen candy. Weird. And it tastes the same: Overly sweet mead with wintergreen. The latter is OK with me, I do like wintergreen, but the sweetness is really too much. Practically no carbonation, this is flat and thick. I prefer the other meads I've had so far.

Chaucers Mead pushed me over the edge. -- Consuming Chaucers was a life changing experience. Shortly after having this mead for the first time I started my quest to reproduce it for my own. I started a halfway serious hobby of wine and mead making. Fortunately my meads were among my best beverages but I was never able to duplicate Chaucers Mead. This is a dessert mead, fairly sweet, fully of honey goodness. ages well. The flavor is not for everybody, but it's worth a try, who knows it just might change your life to!

This is my second Mead. Unmulled, it is a yellow colored, full bodied verm very sweet brew. Mulling is the way to go, and Chaucer makes that easy to do, with instructions and tea bag packaged spices. If you’d not had a mead and not mullied one, it is a history lesson retold as it was a thousand years ago. Mulled, this is a complex flavoring of spices with a backbone of sweet honey. But in the mulling, the spices cut the unpleasantness of too much sweetness. Watch the alcohol content of this one. Sneaks up on you. All in all, I totally enjoyed the experience much as I’m sure it was in Medieval Europe.

cold-aroma is white wine like...fruity, mucat...and of course, honey. little/no carbonation. surprisngly full body and a strong sweet honey and fresh fruit flavor. 7/7/9/8/8...3.9 hot-throw in the mulling spices, which include cinnamon, clove and orange peel, and the aroma becomes quite earthy...strong...fills a room. great for the holidays. appearance is now golden instead of yellow. i think if i cut the time heating from 10 minutes to 5, i'd have liked the flavor better hot, but the spices were a little too heavy. Enjoyed it both ways, though. If you like honey, it's for you...if not, don't bother. 9/8/7/7/8

This is my first mead--and I didn't care for it much overall. I sampled it cold and really didn't care for it, but after mulling it with the provided spices I liked it a bit more. Aroma is honey sweet with fresh fruits and some spice. The appearance is crystal clear and almost chartreuse in color, reminding me of the German Wine Blue Nun. Exceedingly sweet with a big honey alcohol bite effect. Good fall/winter mulled drink. Not too big on the cold serve for this one.

I had this following an O'Fallon Pumpkin Ale at the KC Renaissance Festival, very appropriate. Smelled heavily floral with a light sweetness and citrus. The hue was like a darker chardonnay. Filling, but not memorable mouthfeel. The flavor was full of flowery, herbal and mild citric notes, however, they all were vastly outmuscled by the huge, upfront sweetness. I don't know enough about mead to tell if it was backsweetened or underattenuated, however, it was tooth-rottingly sweet and just too much.

::::..drank at a chill..:::this is a treat, mead, finally...pours a sunray yellow, bald, sweet smell..honey,sharp alcohol,more honey...,very sweet and nice mouth coating, MORE LIKE a SHERRY...good stuff,different for a beer drinker,can see the appeal for sure!...my brother and grandpa would love it!!

Well, I have long awaited to try this mead-style brew and it will be my first of the style so I will be at a bit of a handicap. I am first going to try this brew chilled and then at a later date, try it mulled with the spices. The aroma is very sweet and first off very wine-like as well as cider-like with aromas of sweet apple, some honey, and some spices with maybe hints of white grape. The appearance is a very pale yellow and looks just like a chardonnay and has no carbonation at all with no head or lacing to speak of. The mouthfeel is surprisingly light-bodied with some nice complexities of grape with decent balance with a very dry palate. The flavor is sweet and of honey and is a bit sticky with some spices poking through with an aftertaste that is sweet and a bit sour as well with a finish that is dry and almost syrupy. Overall, not really what I expected and was much more similar to a wine than a beer style but still a great experience. I would like to add, the finish and very backend of this brew is most reminiscient of a beer and the honey-base of this creation is very nice and tasty and "beer-like" so to speak; recommended mead here and I look forward to submersing myself in this style in the future and I definitely look forward to trying it mulled with spices.

My bottle pours in at 12.4% purchased from LCBO limited release selected Vintages. The appearence is, baring some yellow hue, virtually clear. Scent is sweet, predominantly honey - as expected I suppose. Alcohol is hidden though - espcially when warmed - it can be slightly felt in the back of the mouth. A sweet first part, the taste becomes pinching as it goes down. I am far from experienced with wine (or mead for that matter) but this comes across as a great dessert wine and not all too far from an ice wine. Serves just as well cold as it does heated I found. An enjoyable drink alltogether.
