Every two months Brewmaster Garrett Oliver and company turn out a new and inventive beer. We call these draft-only releases our Brewmaster's Reserve. The latest batch goes by the name of Sorachi Ace. Here's what Garrett has to say about it: Most Brooklyn beers are made with a blend of hop varietals. As a chef does with spices, we look to get the best qualities of each hop and create a harmony of flavors and aromas. However, a few years ago, we ran into a hop unique enough to deserve its own moment in the sun. A large Japanese brewery first developed the hop variety "Sorachi Ace" in 1988. A cross between the British "Brewer's Gold" and the Czech "Saaz" varieties, it exhibited a quality that was unexpected - it smelled really lemony. The unique flavor of Sorachi Ace was bypassed by the big brewers, but we think it's pretty cool. Brooklyn Sorachi Ace is a classic saison, a cracklingly dry, hoppy unfiltered golden farmhouse ale, but made entirely with now-rare Sorachi Ace hops grown by a single farm in Oregon. We ferment it with our special Belgian ale strain, and then add more Sorachi Ace hops post-fermentation. After the dry-hopping, the beer emerges with a bright spicy lemon zest aroma backed by a wonderfully clean malt flavor. It tastes like sunshine in a glass, and that suits us just fine, especially with seafood dishes.

    After having the Bush Pilot Pengo Pally Saison, rating this one. Hazy light-golden colour with a fizzy head that does not stay too long. Aromas of citrus, sweet yeast, herbal hops, sourness and hints of plastic. A lot of the same for the taste with the bitterness and dryness helping the moutnfeel, making the plastic notes a little stronger. Not a fan of this, so preferred the Bush Pilot Pengo Pally.

    The sample I got popped and fizzed like champagne, but at least the fizzing wasn’t volcanic like some others I’ve tried. It pours a clear yellow with a thick white head, not impressive to me anyway, but I’m prejudiced towards dark beers, and as the old warhorse goes, you can’t judge a book by its cover - or a beer by its appearance. Aroma is much more promising than the appearance - strong, yeasty, fruity, with grassy and rubbery notes. Refreshing flavor has malty, fruity, yeasty and grassy notes with a hint like clean rubber - I get notes of apple and banana in the fruit. Texture is quite fizzy and lively, yet smooth and firm-bodied. Overall, pleasing and lip-smacking.

    The beer pours a hazed light golden yellow with a generous bubbly off-white head. The aroma is light fruit, yeast, citrus, and spices. The mouthfeel is medium bodied with average carbonation. There is a hint of creaminess. The flavour is honey, hops, yeast and some light fruits and spices in the background. Very drinkable.

    Nose of lemon, yeast and and some cardamom. Spot on for style. Unfiltered medium yellow body is topped by a great rocky head with excellent retention and decent lace. Mouth is fullish and creamy with very nice carbonation. A slightly mild saison flavor profile; spicy flavors are subdued (I LIKE!) and lemon is present as well as yeasty farmhouse funk. Finish is perfectly dry. I love these saisons in place of champaigns.

    Pours out a very clear yellow color with a massive white head. The aroma is some where between skucky and champagne. The mouthfeel is pretty rich for such a non-Belgium yellow beer. The taste is pretty plain and not something I would like to visit again.

    A mild funk to the nose, touch of barnyard but mostly sweet and tangy. The beer itself is quite mild overall, q nice blend of flavors that are well aged and subdued. The hop is really not the major player, more marketing than anything. Nice beer, good for many occasions.

    Hazy straw yellow pour with a tall, bubbly, Champagne-like head, nice lacing. Nice aromas with Belgian yeasts, earthy hops - citrus and floral, zesty lemons, honeysuckle, some sweet grains. Dry mouthfeel. Flavors of sweet grains and malts, zesty citrus and floral hops, lightly funky Belgian yeasts. Nice and refreshing.

    never sprung on a bottle, but on tap, yeah .. . pours a light honey gold .. medium foam .. . mostly yeast and bitter hay .. . medium to light mouth feel .. . nice bitterness level .. . a bit of a boring finish .. . . ken stiller?

    From Zyn, Calgary; corked and caged 750ml bottle. Clear, medium gold under a lively white head. Aroma of citrus and yeast. Flavour was crisp, fruity and yeasty. Good mouthfeel for the style, and a tart finish. Nice, refreshing beer.

    WOW!!!! Pours fizzy muted lemon with a low white head. Aroma is faint but zesty. Mouthfeel is sharp. Flavor has citrus, lemon pepper and is very crisp and clean. Somewhat reminiscent of an Orval. Super nice presentation.
