Paper Chase is a certified organic copper-coloured ale, brewed with locally foraged birch bark and aged on roasted Canadian birchwood. Just-lit campfires, caramel and tea-like tannins intermingle in this decidedly delicious (and deciduous) ale. It’s part of Beau’s Wild Oats Series of innovative beer recipes that offer bold flavours and new adventures for the craft beer drinker. History & Style We’ve taken Canadian birch and its strong-yet-pliable bark beyond the iconic canoe with the creation of Paper Chase. Working with birch in two ways brings out complexity of aroma and flavour. The birch bark is hand-harvested and used as an ingredient, and then the beer ages for a time on roasted birchwood. On the label, two paper airplanes chase each other in a mid-century modern graphic style. Tasting Notes Paper Chase pours copper with a light haze and white foam. The aroma consists of caramel, dried fruit and baking spice. The birch asserts itself in the flavour offering firm tannins and impressions of sandalwood. The finish is long with lingering caramel sweetness. INGREDIENTS Local spring water, organic barley malts, organic oats, organic birch bark, organic hops, brewer's yeast. Picked up a bottle at Broue Ha Ha, Gatineau. Pours a fairly big frothy/bubbly beige head and has a coppery amber appearance. Lively carbonation. Patchy lacing. Aromas are woodsy, toasted and bready malts, hints of caramel, earthy and slightly grassy. Flavours of dark fruits, earth, pine, subtle spices, some woodsy notes.

Last brew to review from FeBREWary 2019. Pours a slightly hazed, amber colour with a warm light-beige coloured head that is fizzy, so leaves quickly and hardly any lace is left. Aromas are sweet with some fruitiness over caramel, brown sugars and apple notes, that gives hints of apple vinegar. The mouthfeel is quite dry, and a decent bitterness is present. Not really sweet in the taste, which is nice. Fruity and wood notes. The hops and birch seem nicely balanced together. An interesting dry-bitter amber ale.
