Every spring as the snow melts, the Rivière Castor (Beaver River) swells with new life from Ottawa to the many of the communities to its east. This provides the inspiration for our Spring seasonal, Beaver•River. It is an IPA that blends European and North American interpretations for a taste that is quite unique. History & Style The origins of the India Pale Ale are as exciting as the flavours themselves. During Britain’s occupation of India, British soldiers were guaranteed a ration of 6 pints of beer a day. However the beer would spoil on the long ship ride to India, so brewers were forced to make a few adaptations to give the beer a better chance of surviving the voyage. The essential oils of the hop plant is a natural preservative as is the alcohol. So to help the beer stay good longer, the beer was made with more hops (increasing the bitterness of the beer) and at a higher strength (which also helps keep the beer tasting balanced, as the extra malts needed to increase alcohol also adds sweetness). The resulting beer was very strong and flavourful. Fast forward to the early days of craft brewing in North America. Innovative pioneers in the United States and Canada began brewing flavourful, high quality beer intended to provide an alternative to bland, corn-syrop laden mass produced beer that dominated the beer industry. Their experimentation led them to the traditional IPA style. They also began using hops that grew in North America, which tended to be more assertive in flavour and aroma. This led to what is now commonly referred to as an American-style IPA.

The beer poured a translucent copper colour with a generous light brown head. The aroma was pine, citrus, and malt. Very much like an English bitter. The mouthfeel was medium bodied with medium carbonation. The flavour was malty, with grapefruity hoppish bitterness.

    Pours a very large amount of frothy head and has a clean dark amber colour. Good lacing. Aromas of citrus and earthy hops as well as malts. Good balance of hops and malts. Citrus flavours and some toasty, bready notes. Even some hints of caramel. Slight bitterness in the finish. Average retention and carbonation. Mild warming mouthfeel and a tad creamy. Really good and easy to drink.

    Clear copper colour pour with a large bubbly head. Decent looking beer retains its head well and leaves spots of lacing. Caramel malt and wet grass aroma. Taste is a little floral, pine and grapefruit. Medium body goes down well and leaves a lingering bitterness.

    The second of 2 Beau's beers brought back by a friend. This was my least liked of the two. A clear reddish colour, highly effervescent, and an off-white cap. Aroma is weak hops, almost sitrusy, but not quite. The taste is well balanced, but neither the malt nor the hops packs a huge punch

    Nice play on one of Canada's national critters and word. A vigourous pour yields a huge tan head on top of a coppery coloured liquid. Aroma is a mixture of sweet malt, grass, some citrus, and some floral hops. The flavour is kind of a mish-mash...it doesn't know if it wants to be hoppy, or if it wants to be malty. Not my favourite

    Nice... a seasonal spring Beau's that comes in singles at the LCBO. Brown bottle with a tag that is printed on recycled paper and tied with a string that farmers use to tie the hay together. A little story of the Castor river is written on the tag. This river is the river I use to play at all my upbringing. Pours an amber colour with a big frothy off-white head that has good retention and leaves a bit of lacing. Fruity grapefruit nose with notes of pine needles. The taste is a nice mild hoppy start with some caramel malt showing up in the finish and then the bitterness becoming more intense in the aftertaste. A nice blend of the English and American IPA which is not a punch-in-the-face bitter brew but one that is above the mid-IPAs out there.

    Sampled at Mondial: Tapped a copper gold with a decent cap, good lacing, small bubbled natural carbonation. Aroma is boiler plate UK-styled IPA: Toffee, toast, piney-citus hops some fruit and floral tones. Medium body, soft on the palate. Nice toast-caramel malts ride just below the resinous piney bittering, wet clean bitter finish. A decent interpretation of the UK style.
