According to the ancient Maya the current, 13th baktun of 5,126 years will end on this year’s winter solstice. What better way to celebrate than with a strong beer made with a very unusual ingredient: chanterelle mushrooms? The Mayan name, Ki’Chun, aptly means “tasty start.” Ki’Chun blends the apricot perfume of chanterelles with three malts and toasted oats. These are united by the exotic fruitiness of New Zealand Rakau hops and accented by a Belgian yeast strain. Dark Thai palm sugar lightens the body a bit and makes this 9.5% alc/vol beer dangerously drinkable, dry and creamy. We at 5 Rabbit encourage everyone to step out out on Solstice Day, Friday, December 21, to celebrate this cosmic event! The 5 Rabbit family will be out and about at the bars below.     This was a strange tasting beer. A bright orange-amber in colored beer. Big sudsy textured off white head rises above. There’s some hang time in the head. A moderate ringlet is left. The profile is strange at first. Bit the nose is biscuit malt and candied sugar. The tasting follows with some orange zest and earthiness thrown in. Moderate bodied and slick on the tongue.
