5 Rabbit Cerveceria

The idea to open a microbrewery was born in early 2007 while Andrés and Isaac worked as business consultants for Bain & Company and were on assignment with one of the largest breweries in Latin America. A high level of stress and very long work hours would lead to Isaac blurting out one Sunday at 4am “We should open our own brewery.” Isaac’s comment would give way to a discussion that would last the rest of the night… and extend for several years. They loved the industry – and the product – so much, that the prospect of someday making beer was very appealing to them. Yet, for the next few years, the idea of opening a microbrewery remained only that, an idea and a dream. Still, every time that Andrés and Isaac got together, the one thing they would always end up talking about was “their brewery.” It would take several years to flesh out these ideas. In 2008, Andrés and Isaac would go their separate ways: Isaac working as an airline-industry expert in New York and Andrés working in a wide range of industries throughout Latin America. During this time, Andrés and Isaac would spend a lot of their free time tasting, enjoying and learning about beer. Isaac particularly, became very impressed with the strength of the craft beer industry in the US. One day in early 2010, Isaac unexpectedly showed up at Andrés’ door – 4,000 miles away from his own house. “It’s time to live our dream” was the first thing he said. This is how 5 Rabbit Cerveceria was born. In 2010, during Chicago Craft Beer Week, Isaac and Andrés met Randy Mosher. It took only a five minute talk in a crowded bar to know that together the three of them could create something exceptional. Isaac and Andrés asked Randy to join them for lunch the next day and the rest is history. Randy joined the team in early 2011 and is responsible for the creative development of the beers.
