Named after the ancient Greek goddess of beer, this is an equally divine Belgian-style Saison with a copious amount of New Zealand hops, freshly harvested Somerset apple juice and wild yeast. However, just to take things that bit further — once bottled, it undergoes a secondary champagne yeast fermentation. Serve as an aperitif or alongside Westcombe’s Unpasteurised Aged Cheddar, whose deep creamy flavour and citrus aftertaste is the perfect accompaniment. On the nose there’s a bouquet of playfully aromatic notes. Take a sip and enjoy a further cascade of striking and sensuous flavours alongside the carefree champagne-like spritziness. The long, dry finish is both refreshing and complex.

Nice white wax dripping from the cap of the bottle. Crazy carbonation forming a big white head that stays quite long. Mildly hazy light-golden colour. Loads of fluffy lacing. Apple aromas with some light grassy hops. Pretty hoppy taste for such a high alcohol percentage. Fruity notes from the malts and yeast as well. Hints of citrus and light tart in the mouthfeel. A different type of Saison, but not bad, with the alcohol very well-hidden. Pretty interesting !

Pours an insane amount of frothy bubbly head and has a hazy orangey light amber appearance. Thick dirty lacing. Aromas are quite perfumy, some orange and citrus notes, spices. Flavours are weird mixture of apple/pear/orange and some yeast to give it some thickness. It's like punching my palate with sweetness, bitterness, sourness and tartiness. It's fairly good at first but has a bit of a soapy like mouthfeel in the finish, kind of a turnoff. Also, for a strong beer, it's well hidden.

The beer poured a hazed metallic gold colour with 1/2 inch white head that lingered for a while. The aroma was citrus, light fruit, yeast, and spices. The mouthfeel was medium bodied with average carbonation. The flavour was grains, yeast, and hints of citrus and apples. Not a bad beer, but not something I would try again.
