This beer is one of a kind. It is our good "old" To Øl/Mikkeller collab - Overall IIPA - fermented with wild yeast. The result is a dry hop bomb that has been balanced by the tart and funky wild yeast notes. When we added the wild yeast the fermentation went out of control and made a 100% attenuation - leaving no left over sugar in the beer.

    August 2012: Shared bottle at local tasting. ABV is 10.5%. Hazy golden to orange colour, moderate head. Strong hoppy aroma, unusual sharpish notes of over-ripe berries and catpiss, hints of sweat. Strong hoppy flavour, the brettanomyces is relatively subdued. Nice warming mouthfeel.

    Strong, hoppy aroma has good malty and yeasty notes, plus a fruity underpinning. Pours a dark, clear, bubbly amber with a thick and rather persistent ivory head. Rich flavor fills the mouth with hops, malt, yeast, a little fruit, a hint of syrup - and a noticeable, though not fierce, alcohol bite. Yes, definitely tart and funky! Firm texture has a good ragged fizz, leaving a hoppy, fruity, subtly yeasty and satisfying finish. Ov-ral, fabulous!
