This IPA is spiked at bottling with Brettanomyces, a wild yeast that, over time, brings about charmingly unpredictable complexities of spice, funk, acidity and more. The operative words in our beer-cellaring thesis are “over time.” For those of you who are impatient or like to experiment, the earliest we recommend sampling this beer is 07.04.15. The beer won’t be fully carbonated until that date. Ideally, you’ll want to cellar the beer up to—or beyond—the Enjoy After date to help it reach its full evolutionary potential. At that point, some facets of the Brett characteristics will have mellowed, while others will have become more profound; it all matures into a fascinating and delicious culmination. Individual results will vary…and that’s both the beauty and the intent behind this beer.

Rated April 2015. Caged and corked 750mL bottle pours with a nearly clear deep gold body that has copper hues and supports a frothy dirty white head of foam. The aroma offers up modest Brett like yeastiness and then light floral, spicy onion hops and then citrus hops off in the background. The taste is forward with Bretty yeastiness that has very little acidic tartness but there is a tart note that lingers around the edge of the experience. There are only soft echoes of the yummy hoppy base beer as I get grapefruit and tangelo, some spicy onion dankness and floral hoppiness. Pretty decent but I much prefer the uber fresh non Brett-d version and for me this isn’t likely to get any better with age.

Enjoy after 07.04.16 version. Pours a clean golden colour with heavy carbonation. The head is huge, very long lasting with some foamy lacing. The Brett is in the aromas with the earthiness and mild sourness, all well-blended with some Belgian Ale yeast sweetness. The taste is where the IPA appears with some sharp bitterness. The Brett shows earth in the background, but the grassiness is the strongest. Gets hazier and hazier as it pours. Another very nice brew from Stone.

Had the 7-4-16 version. Pours hazy apricot with a frothy snow-white head. Aroma delivers tart fruit and fresh malt notes. Flavor offers all that plus a little note of woody hops. Mouthfeel features firm body and good fizz on a sour fruit and bitter hop finish. Enjoy!

750 ml bottle, enjoy after 7/4/16. Pours slightly hazy bright yellow with a huge rocky white head that retains well and laces the glass.
The aroma is sweet buttery malts and acidic brett with some soft fruit and a little bandaid.
The flavor is sweet fruity bretty malts with lots of acidic harsh bitterness in the finish. The mouthfeel is medium bodied with low carbonation and is a bit watery.
Overall, a bit harsh with some off notes. I'm saving another for the best after date. -

Enjoy After 02.04.16. Stone has quite a gimmick going here. Buy one for now and one for later. Good looking beer with a white head that lasts and creates beauty lacing. This beer has many flavours like yeast, clove, peat, some fruit, flowers, but above all, antiseptic and sweaty socks. I look forward to opening every type of Stone IPA but I was very disappointed with this one. Not looking forward to opening the next one. Hopefully it will mellow by at least one sweaty sock.
