This will be our final release in the Divine Reserve series for this year. No. 3 is an imperial or double IPA meaning that it is higher in alcohol and hoppier than a regular IPA. The taste of this beer is initially malt with honey notes (from honey, no less) versus spicy hop bitterness with the hops eventually winning. In fact, you will notice that the bitter will remain with you well after each sip. This is a beer that should mellow with age. While this beer is recommended primarily for the hopheads of the world, the bitter of this beer is surprisingly pleasant for being so, well, huge. That may be attributed in a large part to our water quality. Ah, the things reverse osmosis lets you do. Here is some info on the beer: Cases Made: 542 Date Brewed: July 17, 2006 Date Bottled: September 21, 2006 Original Gravity: 1.082 Final Gravity: 1.010 Alcohol: 9.5% ABV Malts: Maris Otter, Wheat, Caravienne, Carapils and Dark Crystal Other Sugars: Honey, Molasses Hops: Chinook, Centennial, Ahtenum, Cascades For those of you that don't remember, this recipe was inspired by David Majoras' winning entry in the 2006 Big Batch Brew Bash competition. We use the term "inspired by" because when scaling up a recipe, many changes, some drastic, are always made. We hope you enjoy this beer!     A reasonably vigorous pour produces an almost two-finger thick, frothy, amber tinged, tan colored head. The beer is a brilliantly clear, cranberry-juice color and shows a bright, red-tinged, copper color when held up to the light. As I pour this beer I get juicy notes of caramelized malt and hops that have started to age. Age has given this a rich, malty, savory character; light tamari, lots of caramelized grain notes and lots of toasty, bread-like malt aromatics. The hop character has become predominantly pine & herbal smelling though there is still a bit of a candied-citrus-peel backdrop to the nose.

    Big flavors of pine sap, menthol and sharp herbal hops hit my tongue as I take my first sip. Much of any malt sweetness is drowned out by the up front hop character. The hop notes really linger on through the flavor profile of this beer; ultimately providing a linger herbal astringency and biting bitterness that lingers on the tongue for quite some time. The hop flavors lean towards being a little bit metallic and also have a green tobacco character to them. The malt character, while clearly secondary, provides a backdrop of flavors that contribute notes of lightly browned bread crust, biscuit notes, and some caramelized grain notes. While this beer tastes clearly aged (even more than its year and a half might suggest), it is not so noticeable as be degraded; Oxidation has definitely started, muting the hops just a touch (though they are still aggressive & piquant), and changing the malt character, introducing touches of sherry and a definite umami richness. Not overly heavy, though definitely a sipping beer; the aggressive hop character seems to make this drink a little lighter than the actual heft.

    I can't believe how aggressively hoppy the flavor still is, this must have been out of control when younger. With this much hash hop character still evident this beer may still be a few years from peaking.

    Poured a hazy amber color with a small, off white head that left nice lacing on the glass. Aroma of floral hops, pine, tobacco, toffee malts, and a cereal graininess. Taste of caramel malts, resiny tobacco, with citrus, grapefruit, and a bitter finish. No detection of alcohol in this one.

    Holy smokes, I poured this and was expecting a Belgian, guess I don't have the series memorized. After the appearance made my face drop, the aroma quickly tipped me off on my ignorance. Oh well, here's to Saint Arnold in a Chimay glass! Orange pour with some reddish-orange hues and a thin head covering. Retention was weak. Lacing was minimal. The aroma was strong resinous hops, some citrus rinds. The flavor was oranges, orange rinds, light melons, earthy malt notes, and lots o' pine in the finish. Sticky mouthfeel, although not sweet and sticky, finishes rather bitter. A nicely done dIPA, enjoyable, on the mark, but not outstanding. Thanks to Bert for hooking me up with this one!

    very nice happy-sweet hoppy smell....good lookin lacin!...tan brown rustic colour...very drinkable and smooth..this is 9.5???..wow...i like it...not as full in the mouth department for an imperial but satisfying!...lots of great flavours hidden in this one...not over done like some ipa/iipa's..!!...complex and delicous!....leaves such a nice bitter sweet taste on the lips!!!
