This Certified Organic ale is a stylistic hybrid of an English brown ale and a German dunkel weizen. It is dark in colour but light in texture, providing all the rich flavours of a stout or porter with the easy drinkability of a wheat beer. This was first brewed in 2006 as a winter organic beer to complement our Organic Dooryard Summer Ale. It is a recipe that was partially designed with the Weyerman Brewery in Bramburg. It was so popular that it made it into the full-time lineup. This beer is not based on the rum cocktail, but rather a line from Edward Bulwer-Lytton’s 1830 novel Paul Clifford.     Bought this one in Edmonston, N.B. when I was on tour with my band. This German-style Dunkel has a huge head that is beige, very creamy, excellent retention and thick and wavy lacing. This is also a hybrid with a traditional English ale so its colour is a dark amber with little bubble carbonation. It becomes hazy when the whole bottle is poured, and ruby highlights show. The aroma is mild with a touch of hop. The malt is very well-hidden with notes of yeast and chocolat. Smooth mouthfeel without stickiness. In the taste, I get some sourness that I am not sure if it is suppose to be there, or if this one outdated. I have seen other reviews talking about this too. Other than that, I do not taste much else. Maybe just disgusted with the infection of this brew. A nice mix of two great styles, but lacking in flavours... and wish I could of had a fresh one.
