Quadruple Ale brewed with a blend of Belgian ale yeast and our house ale yeast, Woodcut No. 5 presents a rich, spicy dried fruit essence and a deep auburn color. Aggressive vanilla notes from the New American Oak complements the Special B malt with hints of cherry, raison and plum on the palate. Sampled with KnoxBeerCrew. Deep brownish-golden pour with tight short head, some lacing, some carbonation. Big oaken woodsy aroma upfront, welcoming, light vanilla, mellow caramel, some dark ripe fruits then more oak. taste is woodsy also with a slight tinge of acidity, but mostly caramel, ripe fruits, oaken vanilla, alcohol and goodness. Loved this Oaken take on a Quad. Very enjoyable.

had this over the weekend at a birthday party. quite overpriced (i think it was near $25 way back when) but I loved the quite obvious oak influence on this beer. a well made deeply fruity and slightly spicy quad, mellowed and softened by the oak, with a pronounced oak and vanilla character. A little alcohol shows as it warms, but not so much to take away from this fine brew.

750ml bottle, bottle no. 5206 dated June 2011. Pours a hazy tea like amber. It has a small off white head after a vigorous pour that quickly goes to a thin film.
The aroma is woody vanilla and dark fruits, rather subdued. More alcohol shows up as it warms.
The flavor is sweet caramel and toffee malts with some dark vinous fruits that leads to a medium bitter, dry, lightly alcoholic finish. The mouthfeel is medium to full bodied with very low carbonation.
Overall, I've had this a couple times. This was the least impressive sample. I was surprised by the lack of carbonation and the subdued nose (although both improved as it warmed). I don't recall that from other samples. Also, it's a bit too much on the sweet side. When I first had this, it was one of my favorite Woodcuts, now probably not so much. It'll be interesting to see how it ages.
