This collaboration with Perennial Artisan Ales pairs two favorites: chocolate and beer. Dessert is best poured. And the brewers at Perennial agree. So for our next Lips of Faith release we dreamt up a beer that would bring together chocolate sweetness, Belgian yeast, deeply roasted malts and just the right shake of salt to pour a creamy stout worthy of a cherry on top. Visual Pitch black, with thick tan foam and firm lacing. Aroma Rich, with lots of cocoa/baker’s chocolate aromatics. Heaps of roasted and rich dark malts. Lovely fruity hints of Belgian esters, banana, pears and plums. Flavor Sweetness upfront, balanced with a mild bitterness and a touch of salt to express sweetness. Mouthfeel Smooth lip smacking and mouth coating. Warm, boozy and slight lingering astringency from the salted chocolate. Body Full-bodied Special Processing The salt, calcium chloride is used in the brewhouse to lower the pH (increase the H+ activity). Water adjustment is normal practice. The extra addition of CaCl will actually increase perceived body and fullness to a finished beer. The cocoa powder was added on the cold side after fermentation pre-chiller to retain all the delicate volatile aromas and flavors. The salt addition of sodium chloride, or table salt, is added after fermentation not to adjust water chemistry but for extra flavor addition. When we add table salt to our finished product, it acts as a flavor enhancer, it will increase the sweetness perception and maybe a tiny hint of that salted chocolate we all crave.

    About average for an IPS. Was hoping for some more texture...maybe a little more flavor, but overall decent and enjoyable. Didn't get too much salted and caramel though. Blended in with the other chocolate and malt flavors...built up slightly towards the end. Jet black appearance with a semi-creamy texture. Curious and wanted to try, but probably could have done without for the $.

    Comes out of the tap a luscious coffee brown with a thin but persistent tan head. Rich aroma is primarily mocha, quality coffee plus good chocolate, with hints of roast malt and molasses. A bold chocolate note dominates the flavor, but lets coffee, roast malt, molasses and a bit of caramel share the stage. Why have chocolate cake for dessert when you can have beer like this? Firm, viscous texture has good fizz. This beer is worth its salt!

    22 oz bottle. Pours dark brown with a huge creamy nitro like light tan head that retains well and laces the glass.

    The aroma is roasted chocolate malts and salt with some plastic.

    The flavor is sweet and acidic chocolate malts with some burnt roast a some ashy leather. As it warms , more sweet lactic chocolate comes out and a little Belgian yeast. The mouthfeel is medium to full bodied with full carbonation.

    Overall, sweet roasted chocolate with a lot of off flavors, but didn't pick up much salt.
