2018 Description Originally brewed to commemorate the Mayan End-of-Days prediction, we wanted to create something suitably dramatic and bold. Designed to challenge the senses as well as perceptions, this is an easy-drinking, strong flavoured chocolate and chipotle spiced stout. Rich, heady chocolate on the nose, deep and smoky throughout and with a tingling finish arriving late from the smoked chillies. 2014 Description Inspired by an ancient Mayan recipe, Ilkley Brewery has created an extraordinary Stout. It is velvety smooth, bittersweet, and has a subtle smoky fire in its belly. The Mayan is a Chipotle Chocolate Stout, dare you take it on?

The beer gushed out of the bottle, so lost a lot of it and head disappeared quickly leaving no lace. Dark brown colour with ruby highlights. Beautiful aromas of chocolate, chocolate and spicy spices. The taste is pretty much the same with some coffee notes. A little oily mouthfeel. A very good chipotle chocolate stout.

330ml bottle from LCBO. Pours a fairly large frothy tan head but unfortunately doesn't stay around very long. Some decent lacing. Has a dark brown appearance. Aromas of chocolate, coffee, some spices, lots of dark roasted malt notes. Flavours of coffee, roasted malts, hints of chocolate but not as much as in aroma. The chipotle is fairly subtle, not too offensive but still noticeable. Has a nice warming sensation. Pretty good retention. Medium-full bodied. Good stuff.

I clearly did not read the bottle carefully, especially the part where it says 'chipotle'. I admit, I was taken very much by surprise by that. A dark brown pour, a littlen on the thin side with a chocolate brown cap. Coffee and chocolate dominate the aroma. The flavour is dominated by notes of coffee, roasted malt, and nuts...and then comes tyhe chipotle pepper, chugging down your throat like a French bullet train.

Excellent aroma of vanilla and chocolate. Nice dark brown pour although the head and lacing could be better. Flavour, not too complex but it is wonderful. Roasted malt, chocolate, vanilla and pepper that becomes more noticeable towards the end.Medium smooth mouthfeel. Yumm stuff.

The beer pours a dark coca-cola colour with a creamy brown head. The aroma is peppers, roasted malt, and milk chocolate. The mpouthfeel is full bodied,m creamy, with full carbonation. The flavour is slightly sweet milk chcolate, roasted malt, and a spicy peppery aftertaste. -

Pours a rich chocolate brown with a thick and rather persistent light tan head. Roast malt aroma has a sweet chocolate overtone and herbal and coffee hints. Chocolate dominates the flavor, but roast malt comes through as does a woody hop hint. Chipotle (I think) gives it a subtle peppery kick. Texture is silky smooth and quite firm, yet has a decent tingle, leaving a woody, chocolaty and herbal finish. Do da Mayan!
