Wild2 Dubbel ale, our mahogany-hued autumn ale spiced with schisandra, opens with the floral, earthy notes of fall itself. Schisandra berries, known as “five-flavor fruit,” possess all five flavors: salty, sweet, sour, spicy and bitter. This malt-forward dubbel ale is fermented with a Trappist yeast and finishes dry and slightly sour with a touch of bretta. Lasso a bottle! BEER FACTS Birthdate: November, 2013 Body: Full body. Luscious but finishes dry so it feels medium. You can drink the whole thing and still want another. ABV: 8% IBU: 30 Calories: 235 Hops: Target, Goldinas, Liberty Malts: Pale, Munich, Carmel 80, Special-B, Wheat, Chpcolate Wheat, Oats Yeast: Trappist Ale Yeast Fruits/Spice: Shisandra Aroma: Banana bubblegum and smoky clove- quintessential trappist yeast strain notes. The roasted malt bill brings to mind toffee, caramel, brown sugar, sarsaparilla and bittersweet chocolate. The bretta funkiness kicks the phenols into high gear along with more tropical fruits. Mouthfeel: The beer opens sweet and creamy finishes warm and peppery herbal tongue-number. Full, clean finish. Flavor: Deep rich and malty with peppery-like finish and dark fruits, wild musty pineapple, cellar-like flavor. Visual: Deep ruby brown, bretta haze, medium tawny foam.

Pours a clear mahogany with a fairly thick light tan head. Aroma is fruity, mainly apple and sour cherry, with a malty underpinning. Flavor has a strong, somewhat sour fruity core, yielding notes of apple, banana and cherry, supported by a malty undertone and more than a hint of greenwood hops. Texture is rather lively and somewhat firm, leaving a sour fruit and greenwood finish. Go wild!

So why is a Dubbel with one extra ingredient a BSA instead of a Dubbel? Fizzy yet very smooth texture. Feel is very good. Strong head retention, nice mahogany color. Flavor is bubble gum yeast with a cinnamon follow up. Malty and yeasty in the nose as well. Pleasant brew.

Dark, red-tinted brown, 1/2 finger of mostly white head. OK retention. Fades to film. Slight lacing.Aromas of Belgian yeasts, dark fruit with mere suggestions of raisin & spice notes with clove, lighter cinnamon. Flavors of roasted malt up front with muted fruit notes. Yeast forward. Clove, allspice, cinnamon. Some leather and chocolate pop up at the end. Alcohol is well hidden, moderately high carbonation.

A mahogany colored beer with a big sudsy textured, off white head rising above. There's good hang time on the head. A thick ringlet is left. A strange fruitiness in the nose and tasting. Tart like, medicinal. Some licorice and caramel.

22 oz bottle. Pours ruby amber with a medium creamy off white head that retains well and laces the glass.
The aroma is sweet caramel malt and Belgian yeast with some spice, fruit and tobacco.
The flavor is sweet bubblegum malts with some slightly tart cherry fruits and a little peppery leathery roast. The mouthfeel is light to medium bodied and pretty watery.
Overall, interesting but kind of an odd combination of flavors with a weird aftertaste.
