Its delicately spiced aromas, from which thyme and tarragon emanate, harmonize with aromas of red wine and ripe cherries. In the mouth, the sweetness of the fruit adheres to the woody. What's more, a fine acidity adds complexity while maintaining balance. The cherry (Lady Bing) and spices remain present without being too intense.

Bottling date: 11 janvier 2019, 750ml bottle from the brewery. Pours a hazy copper colour with caramel highlights. The bubbly-frothy head is a warm beige, fizzing away slowly and leaving a coat of bubbles on top. Not much lacing. Definitely a Brett sourness in the aromas with some light earthiness. The 12 months in Cabernet Sauvignon barrels adds that vinous character, which comes out in berries. This blends well for the flavours. Dark malts that are smooth and give mild dark fruits in the base. The berry notes are present again and the red wine is balanced in the finish with the light hops. Some nice spices all around. Not much sourness in the taste, so this is quite a nice surprise. I quite like this.
