Bière longuement fermentée à partir de levures indigènes provenant du pied de cuve de Pinot noir du Domaine du Nival. On flaire les fruits à noyaux mûrs, le foin et la paille au soleil, la fleur de pommier et le carré au miel. Les goûts tranchants du raisin et de la bière rafraîchissante valsent dans une bouche texturée et crémeuse, mais sèche, surmontée par le raisin, la pomme rouge et leurs pépins.

    750ml bottle that pours a slight hazed, golden colour with very active, tiny bubble carbonation. The head is big, frothy, a little off-white with decent retention and some light soapy lacing. Lots going on in the nose, and not overly powering. Blended fresh herbal notes with caramel malts, some prunes, hints of wood and vanilla. In the taste, apples come out, blending with the light caramel, some mild grassiness in the finish, creating decent dryness. The wild yeast and Pinot Noir are well-hidden in here, just adding a nice touch, but not much funkiness. A very easy-drinking, not too punchy Wild Ale with lots going on, but all on the mild side.
