Astutely hopped for balance and dimension, while finishing exceptionally dry. A perfect beer to transition from winter to spring. The saison is named after the Saw-whet Owl, which can be found on Southern Appalachian Highlands Conservancy protected land in North Carolina and Tennessee. It is the smallest owl in the eastern U.S. and can be spotted perched among the conifers during the winter months. Saw-whet Saison, like our other seasonals, is named for a feature of the Southern Appalachian landscape

Pours clear bubbly amber with a thick though effervescent eggshell head. Aroma delivers strong fruity character, apple and pear and banana with more than a hint of citrus and a snippet of tropical fruit; subtle malt provides a foundation. Flavor continues the fruit notes of the aroma and adds a little more malt plus a hay tone from the hops. Body and fizz are good. Tu-whet, tu-who, a merry saison.

A dirty golden colored beer with brownish tinge. Big frothy textured white head rising above. Good hang time on the head. Thick fluffs of film and cap left behind. A citric, wheat nose. Fruit and pepper tasting. Pretty good. Light and refreshing.
