Razor Wit is our new summer seasonal. This Belgian-style Wit, or "white" ale, is an unfiltered wheat beer brewed with traditional ingredients and a Highland twist. Wits are conventionally brewed with noble hops, pale malt, unmalted wheat, orange peel, and coriander. We have made this beer our own by adding other unique spices to create complex aromatics, a refreshing taste, and a crisp finish. This summer brings Highland’s twist on a wit: complexity created with ginger, grains of paradise, and cumin, in addition to the traditional coriander and orange peel. “I love the ginger,” said head brewer Joey Justice. “Ginger can dry the beer out, and grains of paradise are sort of hot, so we started with a slightly sweeter base and more body to compensate for the spices.” Trying to find the balance of flavors was a fun challenge with Razor Wit. “We ground the spices, heated them in water to simulate what would happen in the boiling process, and dosed each one in a neutral beer,” said Justice. “We identified the flavors we got from each spice… and talked about how they would work together.” Several combinations in varying proportions were tested. No single ingredient or flavor was to dominate. “There’s a lot of talk about ‘creativity’ meaning the hottest hot sauce or the strongest coffee, but we look for a way to find balance. There’s a lot to be said for subtlety in being creative,” said Justice. This “Moorish” style wit is refreshing with a savory, not sweet, blend of flavors, and a clean finish. Razor Wit will replace Cattail Peak Wheat in May and will be available through August. Like Little Hump, Cold Mountain, and all other Highland seasonals, Razor Wit is named after a prominent North Carolina mountain peak. Every seasonal release is combined with a presentation in the brewery tasting room and a hike to, or near, the named peak (with the appropriate beer served at the top). For all seasonal events and hikes, Highland partners with the Southern Appalachian Highlands Conservancy (SAHC). They work to protect the NC and TN Appalachians – the world’s oldest mountains – including their unique plant and animal habitat, water, farmland and scenic beauty that is vital to Highland and the Asheville area.     Pours out a cloudy yellow color with very light white head. The aroma crisp and clean with light citrus notes. The mouthfeel is smooth semi thick. The taste is malt, wheat and light hints of citrus.

    Golden color with white head. Aroma is lemon, banana, coriander. The flavor is rather mute with hints of citrus and spice. Overall good session beer not much else. Dont think drank kind of beer.

    A good light summer beer. On the thin side. Kind of watery. Flavor has some spice to it, slight citrus. Smooth and crisp feel. This isn't one that I will seek again, but an OK seasonal to try something new.

    Strong, sharp, spicy aroma has fruity and wheaty notes, promising a flavorful beer. It pours a clear, bright solar yellow with a decent, if not thick, white head that leaves minimal lacing. Mouth-filling flavor has firm spicy (mainly cloves and coriander), wheaty and citrus notes plus hints of hops and butterscotch. Lively texture has about average body and plenty of fizz. Lip-smacking and very tasty, refreshing after a summer scorcher.

    A murky yellow colored beer with a big frothy textured white head. Good hang time on this one. Settles eventually into a moderate ringlet and some film. Sweet oranges in the nose. Light dance of that same fruity sweetness and some spices. Light bodied and refreshing.

    On tap @ Bearden Beer Market. Light straw golden yellow pour, short white top with some lacing. Spiced and citrus aroma: sweet oranges, orange zest, coriander, pepper, honey maltiness, light clean hops. Taste is very refreshing with a citrus and spiced tingle, zesty, feisty, and then lightly sweet and amply floral hopped with a very light bitter linger. Very nice summer beer, better than their past summer seasonals. Will buy more.
