08.14.04 Tap at brewery, HW 5th anniv. Pours a soupy gold with nice white head. This beer completely reminds me of yardwork - juniper clippings, grassy rye-weed, and some compost funkiness. Flavor is a mirror of the aromas, more compost, bready, grainy. I’m not sure what the palate of a sahti should be, but this is sort of watery, flat, and thin like an English style ale (?) to me, not what I’d expect based on the flavor or appearance. An odd brew but delicious, I couldn’t resist multiple samples.

On tap at brewery. Gold in color with a nice white head. Very refreshing. Sweet tasting beer. Nice smell of juniper berries. Interesting. Enjoyable beer.

Tap @ Blind Tiger. Another very interesting creation by Tom. This one tasted like a heather ale I’ve had at Cambridge. I couldn’t tell what the taste was until I was told this was brewed with juniper twigs. Anything to not use hops. The taste is light yet complex. You can drink the whole glass and not be sure if you like it or not. I love the creativity and would like to see this evolve into something.

Poured a cloudy gold color with a small white head and nice lacing. Sweet and spicy juniper, dry and grainy aroma. Citrus fruits up front and a bready, dry, rye taste. A very interesting creation.
