Organic Farmhouse Saison with lingonberry, raspberry leaf, scarlet beebalm and sumac. Delicate, berry, wine Halcyon Barrel House is a new branch on the Beau's family tree. New world brewing, patiently rooted in the old world traditions of mixed fermentation and aging in wood barrels, and bottle or keg conditioning. The Halcyon edition of Parallel Realities is made with organic raspberry leaf and hand-harvested lingonberries, as well as locally foraged scarlet beebalm and sumac. It was brewed at Halcyon in October 2017. Austin Beerworks will be releasing a made-in-Texas version of Parallel Realities later this year. Parallel Realities pours a rich gold colour with a light pink hue. Ample foam gives way slowly to thin lace. The aroma is complex with mingling berry, floral and tangy notes. The flavours are delicate with layers of wine, floral, berry, and herbal goodness, backed by rather refreshing tartness. A resonating note of sweet berry leads into a wine-like finish that lingers delectably on the palate. Halcyon brewmaster Bryce met Will and Adam of Austin Beerworks years back at a microbiology course, and the idea was sparked of collaborating on a beer together: Parallel Realities is the realization of those plans. The concept of Parallel Realities is brewing two versions of a recipe created collaboratively: one made at Halcyon with ingredients characteristic of Canada, and the other at in Austin with ingredients native to Texas. The two renditions are intended to be parallel in heart and soul, thought and process.

    Blend 61, packaged DEC 12 18. Pours a clean golden colour with a fizzy white cap that actually has a longer stay than expected. Wow! There is so much going on in the aromas. Saison base with the citrus notes, some fruitiness and leafiness from the raspberry leafs. Very nice herbal scents as well adding some spiciness. Some sourness in the flavours with the light bitterness in the finish. Gets hazier and hazier as it pours from the 750ml bottle. This is quite the complex brew. Very, very nice.
