Porter baltique affiné en fût de Gin de la Distillerie du St. Laurent C'est la première fois que nous essayons un affinage de bière noire avec des fûts de gin... et le résultat dépasse nos espérances! Le spectre aromatique est totalement différent des autres fût de spiritueux que nous avons utilisés par le passé (rhum, bourbon, rye whiskye...). Le nez est incroyable et offre des notes Umami rappelant la sauce soya et le cèpes séchés. En bouche, le bouquet d'aromates du gin développe des flaveurs florales rappelant la Chartreuse. La bière est extrêmement balancée, la finale est douce et cache le 10% d'alcool de la bière. Le nom "Kombu" provient de l'algue "Kombu royal" cueillie par la distillerie dans le St-Laurent et ajoutée au mélange d'arômates classiques du Gin.

    Pours a real dark brown colour, liking black but with a few ruby highlights. The head is light-mocha coloured, bubbly, with decent stay and a layer of bubbles left on the brew. Roasted malt base aromas with some dark fruit notes and alcoholic-gin-berry hints blending. The mouthfeel is silky, not too thick and with good building dryness in the finish. The Gin is quite mild in the taste, but the flavours blend well with the dark, roasted barley. Some chocolate notes lingers. A nice herbal touch is also in there helping things. Quite a smooth Baltic Porter with just the added Gin to make it interesting.
