Our Threadless/Finch collaboration IPA is a balanced experience of both perceived hoppiness and true bitterness. It pours a darker amber color and finishes with a citrus flavor, and when combined, will require this to be the last IPA you ever drink! Well, maybe, we realize you will probably drink more, but the result of this recipe clearly evolves into a very balanced IPA. The grain bill on this big pale includes melanoidin and Victory malts. We hop it up before the boil starts with some Columbus first wort hopping, then add a bunch more for bittering.

Nose is pine, citrus, and perhaps a bit of anice, some flowers, some nice bready malts. This is really a pretty pour! Medium gold body that is NOT clear (OK wrong for the style but really pretty none the less) is topped by a thick, creamy dead white head which leaves lovely lacing. If this was not a style that should be clear I would give it a 10 here but, although it pains me, am marking it down to an 8 on appearance. Wow, this is a very well-crafted IPA; nothing over the top but not a watered down presentation either, more or les spot on except perhaps a bit, just a bit, sweet. Although in a can, very reminiscent of DFH 60 on draught. I am following a very spicy mexican-thai inspired shrimp stir fry and this is absolutely delightful! OK, mouth is medium to full, creamy, slippery very nice on the carbonation. Flavor hits sweet malts, goes a bit floral and then citrus, nice bitter finish that is neither dry nor sweet. Some apricot and some nuttiness and some sour grapefruit. This is getting low numbers here, I think its killer!

On tap @ Vic's in Knoxville/ Finch's new to Knoxville. Light golden amber pour, decent white head, some lacing. Light earthy hop aromas, light pine and citrus, then light sweet malts. Flavor follow the aroma, light earthy hops bitter linger, light overall. Decent but more like an APA. Still drinkable.

Pours a nice clear amber with a thick and rather persistent light tan head. Hoppy aroma has an undertone of grapefruit and a hint of yeast. Flavor has hoppy, grassy, citrus and yeast notes, a little bitterness and a touch of sweetness. Texture has firm, smooth body, and fizz is not strong but persists. Definitely tweet.

Pours a cloudy tannish color. Smell is hoppy, some pine. Taste is hopppy and bitter, some pine, a bit unbalanced, asome fruit at the finish, a bit melon like. Overall a mediocre beer.
