Brewed with whole peppercorns and rye malt, this saison is aged in red wine barrels for two months. Its great depth of spicy flavours is complemented by earthy hops from France and Slovenia. Hops: Styrian Celeia, French Strisselspalt & Tettnang

Big champagne like bottle from LCBO. Batch 127, bottled Nov.3, 2017. Pours a massive thick frothy white head, great retention and lively carbonation. Has a light murky orangey amber appearance. Some big dirty lacing sticks around. Aromas of bready and toasty malts, some notes of pepper and coriander as well as rye and barley. Flavours are citrusy, wheaty and a little bit yeasty, some rye and toasty malts after a bit followed by mild peppery and more yeast. Smooth, slick and creamy mouthfeel. Full body. Goes down quite nicely.

The beer pours a hazed light gold colour with a half-inch creamy white head which sticks around. The most prominent aromatic compound was the pepper followed by light fruit, grains, funk, and yeast. The mouthfeel was medium bodied with medium carbonation. The flavour was light fruit and funk with the pepper really noticeable on the back of the tongue. Light citrus notes and yeast were in the finish. This beer was a disappointment as I am still asking....WHERE'S THE RYE? -

Thanks to a bandmate and his girlfriend for this one for my birthday. Pours a hazy golden-orange colour with a big frothy warm-beige head, long lasting giving some thick foamy lace. Earthy notes in the nose with some fruity malts. Apples, mild citrus. The taste is also earthy, reminding me of Brett. Hints of oranges and apples again, with some light spiciness. Written 2 months in red wine barrels, but hard to feel this, as not grape-ish, nor sweet. Maybe a dry red wine, as mild dryness in the finish (but really seems to come from the hops). Which are well-chosen BTW.
