Sour Apple Saison - Release # 3 Brewed on October 27, 2010. This is a gorgeous saison, it has a nice mild sourness with a slight kick of apple and cinnamon. It has a very dry finish form the classic sainson yeast that gives it a little earthy, pepery and spiciness. This beer is fantastic for aging in a climate controlled temperature. The Malts Weyermann Pilsner is the base malt on this beer followed by Briess Flaked Oats and Muntons Wheat Malt. The Hops/Spices Saaz, Tettnang, ground Ginger, Cardamom, Cinnamon, Cloves, Nutmeg, Anise Seed, Grains of Paradise, and Coriander. ABV 8.0%

wish list item that did not disappoint. if they toned down the alcohol just a little on this (it wasn't hot at all but the body was bigger than most traditional saisons) this could be a prototype for the style. Easrthy, dusty, light funk and barn, tart and slightly sweet apple. Very complex and quite tasty. Will buy again.

Batch #22 8.1% ABV. Sampled on 4/12/2013. This saison pours a light to medium orange gold color from a 22oz bottle. Large to medium sized white foamy head, with decent retention and nice lacing. The aroma is fruity and sweet, spicy and floral with a definite sour apple aroma as well. A medium bodied saison. The malts are fruity and sweet. The hops are spicy and floral. Lively carbonation. Spicy and floral, with a very definite sour apple flavor with some hop bite at the finish. Crisp, clean and dry. The fruit adds a interesting flavor component to this beer, although it gets kind of cider like as it warms. Mouthfeel is full and round. Finish is clean, crisp and dry. Aftertaste is slightly bitter and slightly tart.

Clear light yellow body with a vanishing, fizzy head and very little lacing. Tart apple with hints of spices normally used in baked goods, grassy and sweet. A tad tart, but the sweetness really offsets it. Dry and light bodied. Not bad, but nothing exciting either.

Paired with a summer salad: slightly hazy orange golden pour, decent head and lacing, good carbonation. Sweet and tart apple aroma, yeasts, a touch of funk, floral honeysuckle. Taste is not nearly as tart as expected, actually pretty sweet green apple, yeasts and slight funk, more honeysuckle and floral hops. Pretty good saison but I was hoping for more.

Aroma is faint. Pours light pale fuzzy yellow with a low low white head. Mouth has a nice sour hit with a bit of bubbly carbonation. Flavor is apple juice and beer. Was great with dinner.

22oz bottle, release #3. Pours a very light hazy yellow with an extremely fizzy/active white head that bubbles and retains for a while.
The aroma is sweet malts and apple juice with some saison-type spices and a bit of funk.
The flavor is sweet apple juice balanced by some yeast funk with a dry slightly bitter champagne like finish. The mouthfeel is light to medium bodied with sharp carbonation.
Overall, an interesting blend of apple juice and a saison. The saison qualities balance out the sweet apple surprisingly well. It's still a bit on the sweet side for me though.
