Dec. 2012: Shared bottle at local tasting. Hazy dark brown colour. Moderate malty aroma with a hint of smoke. Rich and pleasant malty flavour. This is a doppelbock, not a Belgian strong ale! Not very sweet though, and the high ABV is well hidden. Hints of salt and smoke.

330ml bottle from Willow Park; not a steal at $6 for this size. Clear chestnut pour under a creamy beige head. Big malt aroma, with undertones of dark fruit and spices. Thick mouthfeel. Sweet, boozy flavour with a bitter finish.

Pours a large amount of foamy bubbly beige head and has a dark murky brownish appearance. Lacing is ok. Aromas of barley malts, yeast, wheats. Flavours are fairly strong and malty, lots of sweet notes, toffee and light chocolatey hints. Excessive carbonation. Full bodied mouthfeel. Some bitterness in the finish.

Dark brown/Reddish pour. Head quickly dissipates to a thin cap and leaves some lacing. Very rich and fruity in the aroma and flavour. Yeast is more noticeable in the aroma than the flavour. Sweet and malty, dark fruits with a hop presence. Medium/full body with an alcohol warmth. Nice.

The beer pours a semi-translucent reddish-brown with a 1" creamy tan coloured head which recedes to a ring quite quickly. The aroma is yeast, roasted malt, molasses, and hops. The mouthfeel is full bodied with average carbonation. The flavour is roasted malt, chocolate, brown sugar, yeast, and alcohol. Quite surprised as I expected less. -

Pours a cloudy amber-purple colour with a big beige head that stays long, as very carbonated. Lacing is thick and creamy. Plum and raisin aromas with fruity yeast, roasted malts, sugars, notes of caramel. Smooth mouthfeel with just slight warming. The taste is a little milder, but still pretty complex. Roasted malts, prunes, toffee, anise and grass. A pretty nice Quad for those who like dark fruits, caramel sweetness and grassy finish.

Dark brown with brownish foam head nicely glacing. Aroma is kind of sweet bitter bock. Taste is quite bitter, tones of honey. Long bitter aftertaste. (Velp 201302)

Beer Two of my Twelve Beers of Christmas. Muddy dark bronze brown pour, Coca Cola fizzy beige head which quickly reduces to a constant tan ring leaving some spotty lacing. Ripe fruits, Belgian yeasts, candi sugar, abundant earthy hops in the aromas and palate. Nice and warming, a bit more hops than most Trappist Quads that I've tried. This marks the last of all the "Authentic Trappist" breweries that I tried at least one of their offerings. Personal momentous achievement reached. Cheers to the Monks!

Special anniversary tapping at Summits. Comes out of the tap a rich, deep sable - not much head, but that must be an artifact of the pour. Aroma fills the nostrils with roast malt, sharp fruity and caramel notes plus a hint of bourbon. Rich flavor stimulates them taste buds with caramel, malt, pear, and subtle chocolate and bourbon tones. Sweetness and sourness rather nicely balance each other. Firm texture is silky-smooth, yet has fizz to spare. I definitely need to get to Belgium someday and enjoy these wonderful beers right at the source!

Pours solid brown color and very cloudy with some lacing. Aromas of burnt sugar and dark caramel. Strong malt flavor. Alcohol warming. Flavorful, but not terribly well balanced.
